Since I had so many recipe requests for these spaghetti squash boats, I decided to share it here & on the blog today (for those that want a full step by step). They’re so easy to make & incredibly versatile, which means you can switch up the ingredients. Here it is & if you make them let me know how they turn out. I’d love to see your creations✨

Recipe:
Set oven to 400
Cut squash in half & gut out the seeds using a scooper or spoon 
Drizzle 1-2 tbsp of olive oil over both squash boats
Sprinkle 1 tsp of salt free garlic herb seasoning over each
Lay face down on baking sheet & bake for 45min 
Take out the oven & fork out the squash (will come out stringy like noodles)
Bring squash noodles to skillet on medium heat, add 2 tbsp of Sun Dried Tomato pesto & mix evenly, heat for 3min (then remove from heat)
In a separate skillet on med heat, add 1 tbsp of butter & 1 tbsp of minced garlic
Toss in shrimp & stir around continuously until they turn pink (remove from heat)
Fill “boats” with spaghetti squash noodles
Top the noodles with shrimp, desired amount of mozzarella, a few drops of sun dried tomato pesto (about 1 tbsp on each) 
Place boats back onto baking sheet & into the oven (same temp 400) for an additional 5-10min until cheese is melted & bubbly
You can eat them in the boat or bowl
Top with Parmesan & crushed red pepper🔥

  • I have all these kitchen drawers (4 large pull out...actually 10 feet in length...thats a lot of stuff!) devoted entirely to silverware,  serving pieces, utensils that I've collected for years and years. Believe me, I use them all every single day. None of those old school ideas of  saving for special occasions or just holiday usage. 
Most of the pieces have a history.  I can recall the antique or junk store where I got something, who was with me, the person who share with me the history of the item. Like an old store I'd go to in Lexington SC. Mr. Reuben's antique shop. When I'd pick up my grandson from kindergarten (when I'd visit with them), it was on our way home. I'd take my little munchkin in with me. We'd open  the creaky old door, the bell would tingle and there we were transplanted into the past.

My grandson was always enthralled with everything. Asking questions like crazy. What's this or that, Mama Ally? Oh, that's a telephone. We used to have them and this is how we dialed (old rotary type...yes, I felt ancient!). What a love he developed of vintage things and shopping!

Annneeehoooo, I'm explaining in this pix where I got this gorgeous old serving fork. Found it in an off the beaten path dusty tiny store in Morocco. Meanderings and wanderings like this while traveling bring treasures.

  • Gooood morning😊
Nice and easy breakfast: gluten free toast topped with cashew yogurt (both from @traderjoes) and cinnamon and cacao + 2 fried eggs topped with everything but the bagel seasoning, basil, and chili pepper flakes!
One of the best parts of working from home once a week is being able to have breakfast in bed instead of on the train 😋😅 hope you have a loveelyy day💛

    Nice and easy breakfast: gluten free toast topped with cashew yogurt (both from @traderjoes) and cinnamon and cacao + 2 fried eggs topped with everything but the bagel seasoning, basil, and chili pepper flakes!

Feliz jueves familia. El otro día os prometí que os iba a compartir la receta de mi Carrot Cake, pero no cualquier receta, sino la que está en mi libro ☺️.
.
Es espectacular porque queda súper jugoso y tierno y el sabor es de otro mundo 🤤. Os animo mucho a hacerla y a que compartáis este post para que llegue a mucha gente 🎉.
.
🍽INGREDIENTES:
.
🥕300 g de zanahorias
🥕200 ml leche de soja u otra
🥕La ralladura de 1 naranja
🥕25 ml de zumo de naranja
🥕200 g de panela (o de azúcar moreno)
🥕150 g de aceite de oliva
🥕320 g de harina de trigo o de espelta integral (220g harina de arroz+100g de maicena para hacerlo 
#glutenfree)
🥕1/2 cucharadita de bicarbonato
🥕1 cucharada de levadura química
🥕1 cucharadita canela
🥕1 cucharadita de vinagre
🥕1/2 cucharadita de nuez moscada
🥕1 cucharadita de esencia de vainilla (opcional)
🥕Una pizca de sal
🥕100 g de nueces (opcional)

🍽ELABORACIÓN:
.
🥕Precalentamos el horno a 200 °C.
🥕Lavamos bien las zanahorias y las rallamos o picamos.
🥕En un bol mezclamos la ralladura de naranja, el zumo de naranja, la bebida de soja, el aceite de oliva, las zanahorias ralladas, la panela y la esencia de vainilla. Batimos con unas varillas.
🥕Incorporamos al bol la harina, la levadura y el bicarbonato con ayuda de un colador y mezclamos hasta que esté todo bien integrado.
🥕Añadimos las nueces picaditas y el vinagre y volvemos a mezclar con movimientos envolventes.
🥕Engrasamos un molde de horno de aproximadamente 1,3 l de capacidad y echamos la masa en él.
🥕Horneamos nuestro carrot cake a 180°C con calor abajo y en la rejilla durante 40-45 minutos (o hasta que al pincharlo con un palillo éste salga seco).

🥕Dejamos que enfríe por completo antes de desmoldarlo y lo acompañamos con un poco de nata de coco 🥥 y un buen café ☕️.
