  • Just like your good old-fashioned meatloaf, embutido is made by combining ground meat, vegetables, and spices.  It’s a comfort food that is inexpensive and super easy to make.  This version that I’m familiar with is log-shaped and best eaten with ketchup.

INGREDIENTS

3 lb ground meat (chicken and/or pork)
4 tsp kosher salt
1 tbsp sugar
1 tsp ground pepper
3 tsp garlic powder
1 tsp onion powder
1 carrot (minced)
1 onion (minced)
1 red bell pepper (minced)
½ c raisins
1 c sweet relish
2 eggs
½ c breadcrumbs
1 c sausage/chorizo (diced/crumbled) - optional 
PROCEDURE

1. Preheat oven to 325 F. 
2. In a large mixing bowl, place all the ingredients and mix just until thoroughly combined.
3. In a pan, cook a small amount of the mixture to test and see if more salt or pepper is needed.
4. Spread the embutido mixture on a foil to form a log of about 2 ½ inches in diameter and about 6 inches in length (or any size of your choice, really). Wrap the foil tightly, crimping the ends.
5. Place the embutido on a baking sheet and place in the oven for about 30-45 minutes, until internal temperature is 165 F if using chicken or 160 F for pork.  Alternatively, you can also cook them in a steamer over a stovetop.
6. When ready to serve, sear the outside on a pan with a little bit of oil.  Best served with ketchup.
