S obzirom da su jaja vrlo zahvalna namirnica, ovaj obrok može biti doručak/ručak /večera 🍳😎

Sastojci :
-maslinovo ulje
-1 glavica crnog luka
-2½ zelene paprike (tzv. šilje)
-2 manja paradajza ili jedan veći
-paradajz sok
-(kašikica brašna ili gustina)
-5 jaja
-suvi peršun

Priprema :
Za pripremu ovog jela, koristite tiganj koji može u rernu.
Rernu uključite da se greje na 200°C.

Za to vreme, na malo maslinovog ulja izdinstajte luk, pa dodajte papriku naseckanu na kockice. Kratko propržite. Zatim zalijte paradajz sokom (opciono možete dodati kašičicu brašna/gustina) i kuvajte par minuta. Nakon toga napravite udubljenja u kojima ćete razbiti jaja, i dodajte naseckani paradajz na kriške i začinite suvim peršunom.

Tiganj zatim ide u rernu. Pecite dok jaja ne budu gotova. I to je to.
Mi smo na kraju dodali jos listove cheddar sira pri jelu. Prijatno!

Still away on holiday for a few days. Trying to keep healthy while travelling is not the easiest, but I find snacking on boiled eggs helps. It keeps me fuller for longer and helps avoiding making bad decisions on an empty stomach.

These were fancy hard boiled eggs soaked in beetroot juice for a few hours to create this beautiful colour. We used this as part of a smoked salmon platter about two years ago. The trick is not to leave the eggs soaking for too long. About 3-4 hours should do.

So, I whipped up some delicious fried zucchini and yellow squash rounds for lunch today. Remember, purchasing in season produce is one way to save a little money when making the switch to organic food! 💯💰🥦

This makes enough to feed 3-4 people
Recipe:
1. Slice one medium zucchini and two small yellow squash into rounds about 1/2 inch thick.
2. Mix together 1.5 cups arrow root powder, 1.5 tbsp paprika, 1.5 tbsp course salt, and pepper with a fork and spread out onto a plate.
3. Mix 3 raw pasture raised eggs on a plate (with a fork, as if you were making scrambled eggs).
4. Heat extra virgin olive oil in a skillet on medium/low heat.
5. Dip the rounds in the dry arrow root mixture, then egg, then arrow root mixture again. Tap off excess powder.
6. Fry for 2 minutes per side.
Enjoy!

I served these with a dipping sauce made of about 1/2 jar of @primalkitchenfoods mayo, garlic powder, cayenne, and @frontiercoop Tumeric Twist Savory Spice Blend. Been trying to get more tumeric in my diet, and this was a tasty solution!

Saturday’s use to be the day we looked forward to every week. -
We could wake up without an alarm, do yard work, rest, play, travel, soccer games, go to breakfast as a family — all the things we each look forward to. 
Today •• we did the same thing we do Monday- Sunday. 
Woke up- played with @gingypinchy - Had 🍳#brunch with my sister in laws- got my nephew Josh logged on for #codingforkids -- went grocery shopping- and going to spend the day as a family. 
It’s still surreal to think for the last 11 years, my summers were spent learning new curriculum, researching latest teaching strategies, setting up my classroom, and lesson planning like a manic. Oh and there were the #teaching #nightmares 
Vs. 
now I have the freedom of time which has allowed us to give back, have more, save more, do more, and live each day like a Saturday. -
We absolutely L O V E  what we do. Who we get to spend life with. -
I have no idea where we will go this second half of the year, but I do know, is it’s not my plan, but His I will follow.

Optional but separate the egg through a fine strainer and it gets rid of the “whispy” part of the egg. I put it in a small ramekin. Boil a pot of water 💦 then add 1 tbsp of vinegar, turn down to a simmer, swirl the water in a circle, and your egg in. Let it cook for 3-4 mins. Then scoop it out and it’s ready to go! Added it to a piece of @traderjoeslist sourdough toast with 1/2 mashed avocado 🥑 and red pepper flakes with tomatoes 🍅 and jalapeños 😍
