Pictured are chicken wings, and lamb, not pictured were the gizzards and hearts( it's dar on the street, also I ate them a bit quickly)

They were actually using charcoal, and slightly drunk me can't say no to that smell, and at 1.50 a skewer it was very easy to say yes

  • I saw uyghur on the signboard and smelled lamb and cumin...can't say no to that, besides, lamb on a stick  was a fist culinary love for me and these skewers have a nice seasoning and good chunks of fat

  • Fried rice with Cumin lamb !!! Cumin lamb is a very popular dish in Sichuan , Hunan regional Chinese cuisines. Cumin and lamb is a match made in heaven.  Cumin lamb, when done properly, is very addictive. The lamb cubes are crispy on the surface and very tender inside. The dish has a bold spice mix that includes cumin powder, chilli powder. The finely chopped lamb pieces are tossed  in oil with plenty of ginger, garlic, and onion, the lamb comes out like a flavor bomb that explodes in your mouth.
Load it with some freshly chopped cilantro and some celery  it would be amazing with a cup of steaming jasmine rice. Try it out if you are a red meat person or even if you don’t prefer red meat. I hardly eat or make red meat , but this my favorite dish if I ever have to eat !!!

  • After dropping off my daughter at movie theater with her friend, we went to pick up our son from work. Since he is not getting off work yet, we decided to wait for him at the restaurant and will have dinner there.

We also ordered sesame chili oil starch noodle, spicy dry intestines, dry cumin lamb, spicy house special fried rice and garlic stir fried pea shoot.....foods were ok, when you eat them hot, they r not that salty. They can be salty after they cooled down........mari makan🥢🥢 #nonhalal

  • 🇨🇳 *X is for Xi’an: Spicy lamb with hand-pulled lamb noodles*

Fun fact: There are no countries that start with the letter X. No matter since one of my favorite *regional* cuisines start with the letter X. Living in NYC, we’re lucky to always have a branch of @xianfoods nearby — it’s a mainstay for an easy, quick and delicious quick bite. One of my favorite things on the menu is the hand pulled noodles. They’re paradoxically chewy and soft, with just the right amount of kick with the spices and meaty juiciness.

Verdict: This dish is xi-an-tillatingly delicious! 
Key lessons learned:
1. The hand pulled noodles might be time consuming to make with the proofing time required for the dough, but it’s totally worth it. The noodles are rustically shaped so you just need to gently pull and stretch out the little balls of dough.
2. Get pre-sliced lamb for hot pot at a local Chinese grocer. They’re perfect for this dish, especially with the marinade which renders the meat extra tender and flavorful.

Pic 4 - Roll out the dough after proofing
Pic 5 - Cut the dough into 1 inch strips

Pic 8 - Sauté the marinaded lamb slices
Pic 9 - And then add the noodles

  • If you’re not @xianfoods’ing in NY then you’re only partially doing it right. One of the originals that brought attention to this cuisine in USA tariff free. 15 or so locations around NY now. Seattle just popping up with a few that are pretty good but they aren’t the OG. Spice level kicked me a bit (felt good, deservingly) but was great.

We tried the Cumin Lamb Biangbiang noodles at Very Fresh Noodles and the Stewed Oxtail Hand-Ripped Noodles from Xi’an Famous Foods back to back.
The verdict?
✨We liked Very Fresh Noodles more. Not that Xi’an wasn’t good, cuz it was yummy and the oxtail was so tender. It’s just something about the texture from VFN stood out to us. Rather than it being normal noodle doughy texture, the Biang Biang noodles were almost like a mochi stretchy texture, more unique.
