So today I finished my latest bed, inspired by one of @charles_dowding most recent YouTube videos about no dig, I’ve mulched the borders with cardboard and topped off with a bit of sheep’s wool. Not wanting to suffer the same fate as the runner beans, I’ve only planted out half of the marrow/ courgette plants as well as half the kale and onions sets. The courgette/ marrow looked awful after planting but I’m hoping it’s just a shock to the roots and they’ll be looking a bit happier tomorrow. Fingers crossed that we’ve had the last of our frost!

  • it’s fritter time! 🥳 i tried these yesterday for the first time and they were so scrumptiously simple that i had to share them with you as soon as possible! 🧆 the original batch was just zucchini, potato, and onion, but i added the bell pepper and kale today and they turned out just as delightful! 🌱 feel free to try other veg, fresh herbs, or just stick to the basics- these fritters are very customisable! 😊

potato & zucchini fritters (makes 8-10 fritters)

1 zucchini
2 smallish potatoes (approx. 150-175g total)
1 small onion
1/4 cup diced red bell pepper
1/4 cup shredded kale
1/2 cup gluten-free flour (or regular)
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp mixed herb blend
pepper to taste

1. rinse zucchini and grate into a mixing bowl. peel and grate potatoes and onion into the same bowl, then drain as much excess liquid as possible by pressing mixture into a fine sieve or straining through a cheesecloth or clean tea towel. 
2. finely dice red bell pepper, chop or shred kale, and add both to the mixture.
3. Add salt, pepper, garlic powder, herbs, and flour, and mix together until well incorporated. 
4. roll mixture into balls and flatten into 2-3 inch patties. if the mixture is too wet and doesn’t hold together, add more flour a little at a time until it reaches a better patty-forming consistency. 
5. fill a frying pan with vegetable oil at least 1/2-inch deep. cook fritters on medium to medium high (make sure oil is HOT before adding the fritters to the pan or they will just absorb the oil) for about 3-4 minutes each side, turning once or twice until golden brown and crispy on both sides. if fritters are browning too quickly reduce heat a little.
6. once cooked, remove from pan, sprinkle with a little extra sea salt and allow to cool for a minute or two before digging in!
7. these fritters taste best when hot and crispy, so reheat leftovers in a non-stick pan- with or without a little oil- before eating.

Ingredients * Large white potatoes (there should be enough spice mix for 6)
* Dairy free butter
* 1.5 tsp paprika
* 1 tsp garlic powder
* 1.5 tsp onion powder
* 1 tsp dried oregano
* 1/2 tsp cayenne pepper
* 1 tsp ground ginger
* 1/2 tsp salt
* Chives to garnis -
Directions
* 1.Skewer a potato, and start cutting it whilst twisting the skewer so it creates a spiral.
* 2.Brush with melted dairy free butter.
* 3.Mix all the spices together and sprinkle over the potato.
* 4.Rest the potato on a baking tray using the skewer so it’s elevated slightly from the bottom of the tray.
* 5.Cook for about 30 mins until golden at 180℃ 350℉) - You can also deep fry the potato before dressing it with the peri peri sauce).
* 6.Remove from the skewer and serve. BOSH!

2 large zucchini
1 tbsp olive oil
1/2 cup panko breadcrumbs
1/2 cup parmesan
1/2 tsp paprika
1/2 tsp pepper
Method:
1. Preheat oven at 200 degrees celsius 
2. Trim ends of zucchini and cut in half
3. Pierce with skewer
4. Hold knife at an angle and cut
5. Twist slowly and continue cutting until the end
6. Spread out the zucchini and drizzle with olive oil
7. Add remaining ingredients in a separate bowl
8. Sprinkle over zucchini and until well covered
9. Bake in oven for 40 mins (turn halfway)
10. Serve with your favourite dipping sauce and enjoy!

Dit gerecht staat zo op tafel en is erg smaakvol. De combinatie van courgette met groene pesto, pittige garnalen en knoflook champignons vind ikzelf erg lekker. Natuurlijk ook fijn als het snel op tafel staat. Hieronder het recept:

Ingrediënten 1 persoon:
🔸️1 courgette
🔸️50 gram verse groene pesto
🔸️1 teentje knoflook
🔸️Limoensap
🔸️Peper en zout
🔸️Olie om te bakken

Garnalen:
🔸️7 grote tijgergarnalen
🔸️1 tl sambal
🔸️1 el sweet chillisaus
🔸️1 teentje knoflook, geperst
🔸️Limoensap
🔸️Peper en zout

Knoflookchampignons
🔸️100 gram champignons
🔸️1 teentje knoflook, geperst
🔸️1 tl peterselie
🔸️Peper em zout

Bereiding:
1. Marineer eerst de garnalen in een kom met de sambal, sweet chillisaus, knoflook, limoensap en peper en zout. Laat dit even rusten.
2. Snijd de courgette met een spiraalsnijder tot courgetti. Verwarm een pan met wat olie en knoflook en laat goed heet worden. Bak de courgetti kort en zet het vuur uit. Voeg de groene pesto toe en laat even in de warme pan staan.
3. Bak nu de champignons en in een andere pan de garnalen tot ze gaar zijn en voeg bij de courgetti.
4. Serveer met wat limoensap en verse basilicum. 
Tip; serveer er nog wat geraspte Parmezaanse kaas bij!

Klinkt super goor, is het niet. Ik was hier al zo lang benieuwd naar! Het leek me top om door de courgette lekker veel volume te creëren zodat ik ‘s ochtends NOG langer kon genieten van mijn bakje havermout. Het was ook zeker top! Je proeft de courgette bijna niet en je hebt een dikke bak vol!
Ik maakte het een avondje van te voren klaar en zette dit de hele nacht in de koelkast. ‘s Ochtends heb ik het in een pannetje warm gemaakt. Ik denk dat dit wel de beste manier is, omdat de het dan een lekker dikke pap wordt! 😋

Wat heb je nodig:
- 100 gram banaan
- 50 gram courgette
- 25 gram havermout
- 5 gram cacao poeder
- 10 gram Smart Protein Vanille @bodyenfitshopnl

- Snij de banaan in kleine blokjes
- Meng de courgette, banaan, havermout, cacao, eiwitpoeder, zout en de amandelmelk goed door elkaar en zet dit voor een nachtje in de koelkast
- Warm het ‘s ochtends op in een pannetje en top het af met de pindakaas

    Klinkt super goor, is het niet. Ik was hier al zo lang benieuwd naar! Het leek me top om door de courgette lekker veel volume te creëren zodat ik ‘s ochtends NOG langer kon genieten van mijn bakje havermout. Het was ook zeker top! Je proeft de courgette bijna niet en je hebt een dikke bak vol!
    Ik maakte het een avondje van te voren klaar en zette dit de hele nacht in de koelkast. ‘s Ochtends heb ik het in een pannetje warm gemaakt. Ik denk dat dit wel de beste manier is, omdat de het dan een lekker dikke pap wordt! 😋

    Wat heb je nodig:
    - 100 gram banaan
    - 50 gram courgette
    - 25 gram havermout
    - 5 gram cacao poeder
    - 10 gram Smart Protein Vanille @bodyenfitshopnl
    - 200 gram ongezoete amandelmelk

  • Simple zucchini sabji - This recipe is actually thanks to my mom! While I was doing a vegan/veggie version of Whole 30, she made this (no garlic though, that was my substitute for the hing).

It’s super easy and more importantly quick! It’s perfect for busy people or even novices in the kitchen!

A couple of fun facts - 1 medium zucchini has 2.4 g of protein. Zucchini has potassium, vitamin-B6 and even some calcium. @dishanarangmd did I miss anything?

This is also another veggie that originates in Mesoamerica (Central/South). Central Americans have been eating an ancestral relative to the zucchini for over 7,000 years! The squash we know of today is a result of centuries of cultivation after Spanish colonists brought it back to Europe. .

2 - 3 each, cardamom, cloves
1 pinch of cinnamon
1/2 tsp cumin seeds
1/2 tsp red chili powder

Dans une sauteuse faire revenir dans de l’huile d’olive un oignon blanc et un demi poireau . Ajouter une courgette et des bouquets de chou romanesco ( déjà blanchis) ; ajouter du safran et des louches d’eau de cuisson des pâtes . Une fois les pâtes cuites al dente faire revenir dans la sauce puis rajouter parmesan et pecorino râpées.
PS . J’ai demandé à mon mari @paulbelmondo d’acheter du Curcuma il m’a apporté du cumin ... soit disant c’est presque le même nom 🤔🥴 ... bref non ... ajoutez soit une pincée de curcuma soit du safran . 👌🏻
