  • Avocado smoothies two ways. Avocados are such a versatile ingredient to enjoy in so many ways. And needless to say packed with so many vitamins and minerals (20 to be exact) and are naturally sodium, sugar and cholesterol free. A brilliant base for smoothies. I so regularly now whip up two vegan versions. .

In the first photo - I added 1/2 large avocado, 1 cup unsweetened almond milk, 1 Tbsp unsweetened cocoa powder and 1 Tbsp of sweetener of choice (maple syrup or sugar substitute, honey is also ok if you arenโ€™t making a vegan version) to a blender and blended until smooth. In the second (swipe right), I blended up the same but simply omitted in the unsweetened cocoa powder. Both are deliciously satisfying and so light and airy - almost like chocolate and avocado mousses respectively. I found the burst of fresh blueberries and the crunch of a few almonds to be a great topping. Perfect for a light meal or snack any time of day.

  • This mustard honey thyme chicken dish is a perfect mid week meal when time is limited or youโ€™re just feeling too lazy to cook up a more elaborate meal. The sauce takes just two minutes to mix up and into the oven it goes with seasoned chicken pieces. Leave the skins on in order for the delicious gravy to form as it bakes. I like to serve up this dish with a side of rice, and spoon the pan juices on top. .

To make, preheat the oven to 180 C (350 F). In a bowl, add 1/3 cup (95 g) Dijon mustard (I used whole grain but regular is fine too), 1/3 cup (100 g) honey, and 2 Tbsp extra virgin olive oil. Stir to combine. Have a whole chicken cut into 8 pieces (~total weight 1.5 kg / 3 lb 5 oz). Season the chicken generously on both sides with kosher salt and freshly ground black pepper. And the chicken pieces to a baking pan and spoon over the sauce. Top with some twigs of herbs of choice. I used thyme, rosemary also would work great. Bake for 40 mins or until the chicken is cooked through and the skin is nice and crispy. Serves 4.

INGREDIENTS

Toppings:
Avocado slices with hemp seeds and oregano
Fried egg with fresh chopped parsley
Ricotta cheese with raspberries, coconut and honey
Peanut butter with banana slices, pecans and maple syrup.
INSTRUCTIONS
1. Using a large sharp knife, slice the sweet potato lengthwise down the middle. With a steady hand, make 4-5 thin slices about 1/4"-1/3" thick from the middle of the sweet potato. You can keep the skin or discard. I prefer keeping the skin.
2. Spray sweet potato slices with cooking spray and season with salt and pepper
3. Insert slices into toaster (similar to bread) and toast the slices on high. Alternatively, you can toast them in a toaster oven or bake in the oven at 400 degrees
4. After the sweet potatoes pop up from the toaster, check to see if they are fork tender, and toast longer until cooked to desired texture. Depending on your toaster, you may also want to turn down the toaster setting to Medium.
5. Remove the sweet potatoes from the toaster, and cool on a wire rack before adding toppings. ๐ŸŽž๏ธ: @feelgoodfoodie .
