  • Here off of my shelves are all five Whitewater Cooks books by Shelley Adams. The first one called Whitewater Cooks was published in 2005. The Last one called Whitewater Cooks More Beautiful Food was published 2017.  My concern with each new book as it came out was ‘Did the first one or two have all she had and now she is just pumping out mediocre books ?’ This is not the case at all, all five books are outstanding.  While we featured only one book in our  Club ( the blue one on the book holder) called Whitewater Cooks At Home, I can promise you I have used, highlighted, wrote in , flagged many recipes from all five.  Last night I sat down with them and went through them all again and I still have so many more recipes I want to make out of these books.  I sometimes (well Often) get caught up on all the new cookbooks coming out that I forget to spend time with the winners I already own 😉. Jay Is In The Kitchen

  • Cookbook Club Post and review by Member Meghan.  Book: Everyday Dorie by Dorie Greenspan.  Roast Chicken with Pan-Sauce Vinaigrette 
The cooking time is too long. Probably could have come out 20mins earlier. That being said, the vinaigrette was delicious and a nice, tangy alternative to gravy. Served it over baby kale.

Roasted Acorn Squash Wedges 
The topping was nice. Delicious with the harissa yogurt. For the pomegranate molasses, I boiled down 2c of pomegranate juice, 1/4 cup sugar, and 1 tbsp of lemon juice until thick like molasses. 
For the harissa yogurt, I recommend adding lemon with salt and pepper to taste. Amazon had the Za’atar and sumac powder...

  • 3 years ago I walked into my local rec center and begged the group fitness director to let me teach a class. She didn’t say yes right away but through my persistence 🤣 🤷‍♀️she gave me a shot. Over the years, teaching group fitness changed me.  It’s made me step outside of my insecurities and believe that I was good enough. Good enough to teach a class, good enough to memorize choreography and good enough to be vulnerable. I started a class with just 2 people (PS it stayed that small for a long time!) that has lead to 45–50 participants each week. I’ve developed relationships with the most incredible women who show up day after day willing to give it their all. And today, I am beyond honored to say that I have accepted the position of Group Fitness Director at the @fitnesscenter.af and I cannot wait to build even more relationships, get some killer classes on the schedule and do what I love which is connecting with others. When I look back and think of all the times I doubted myself in this process....it’s a lot 😬 But it when you let that fear fuel you that’s when dreams start becoming a reality 💫

Caravela Cafe and Bistro

So this morning, I was sipping on my coffee at the @caravelacafegoa (swipe right for a picture of their Ros Omelette with Poi, which I had for my first meal on this trip; it hit the spot and how) and writing in my journal when I suddenly found my face on the newspaper in the hands of a fellow diner. It was hilarious and I finally mustered up the courage to borrow the newspaper supplemental I could click a picture. We exchanged pleasantries and went off on our separate walks around the block, stalls outside the church and stray dogs at the same stages of waking up. 
Oh, and #Pangat was officially launched at #galf2019 (The Goa Arts and Literature Featival) yesterday. So yes, Goa has been very kind to me and this trip will be memorable for many more reasons.

  • 🌱 HOW TO EAT OUT AS A VEGGIE 🌱 This is probably one of my most asked questions and it really is easier than you think. One of my go to meals at burger places is a veggie burger wrapped in lettuce piled high with veggies. FTR my favorite veggie burger recipe of all time is in my cookbook “The Vegetarian Meal Prep Cookbook” but I have to say the patties at @habitburgergrill are pretty dang good. Another tip is to check calorie counts because you might be surprised at what tends to be on the high end. I mean who knew that the tempura green beans would be 150 calories less than the sweet potato fries...and if you’ve never tried them...best green beans ever 🤣🤣 Just because you are plant based doesn’t mean you can’t hang at the local burger joint 👊🏻 .

  • Here it is, Whitewater Cooks by Shelly Adams.  We all enjoyed this book so much , I had to get all 5.  You will see some posts over the next little while from this book we did 3 years ago. Many of these have gone into the recipe box/file to do again and again.  I love promoting a Canadian cookbook, plus to make it even more special this is a west coast Canadian Cookbook 😘😉. I would encourage you to buy any and all of these Whitewater books, no matter where you live you just can’t go wrong with these books. The pictures are gorgeous.

  • Lemon Meringue Pots♥️✨ Extra-large eggs, separated

Finely grated zest and juice of 3 lemons (about 125 ml juice)

300 g Castor Sugar

115 g Castor Sugar (extra)

8 Tennis Biscuits (crushed)

Method

Place the egg yolks in a glass bowl the bowl should be able to fit over a saucepan and set the egg whites aside. Add the lemon zest, juice and sugar to the egg yolks, stir until combined and place over a saucepan with boiling water. The bowl should not touch the water. Turn the heat to low and continuously whisk until the mixture thickens and becomes glossy. 
Remove from the heat and divide the mixture into 8 small heat-proof ramekins. Place in the fridge to cool.

In a separate bowl, beat the egg whites until soft peaks. Add the extra castor sugar one spoon at time, beating after each addition until the sugar is dissolved, continue until all the sugar has been incorporated and the egg whites have reached ncorporated and the egg whites have reached the glossy look.

In small Consol Glass Jars (150ml) place the crushed tennis biscuits at the bottom. 
Pipe or spoon lemon filling in each pot, spoon or pipe the meringue and brown to your liking with a blow torch.

When I was thinking about quitting my full time job in marketing to turn my former hobby into a business and a full time job, I was, quite frankly, terrified. 
I’ve always been fiercely independent, and proud of it. But when you’re a single woman who supports herself 100%, working for yourself is that much scarier. And the truth about me is that I’ve never been a risk-taker, so this was one of the scariest things I had ever contemplated. My friend @homemadeinthekitchen shared with me some words of wisdom which have stuck with me since: •
“It’s amazing what you can accomplish when failure isn’t an option.” •
I’ve reminded myself of this numerous times over the course of the nearly four years since I quit my job, but never have these words been more apropos than this past summer, working on this cookbook. •
I haven’t shared with all of you that I had a really bad virus this summer, and was really sick for a while. When I think of worst-case-scenarios, I don’t think this would have even crossed my mind: Photographing a cookbook when the worst of the virus hit.

There were days when I simply didn’t think I’d make it. Days when I was sure this book just wouldn’t happen. But I reminded myself that I had devoted nearly two years to creating some of the best, tastiest recipes I had ever created, and I couldn’t give up when I was so close to the finish line. •
Because the truth is...it’s amazing what you can accomplish when failure is not an option. •
And now, as I look at this beautiful book, I know that I’ve pulled it off. I don’t like to play favorites, but I really think that this is the best cookbook I’ve ever written. Not in spite of everything I went through, but because of it. Because when you work this hard and sacrifice this much, you need to see results. It needs to be worth it. And I know it WILL be worth it. I know you’ll love this book as much as I do. I know you’ll be staining the pages and raving about the food. •
It’s amazing what you can accomplish when failure is not an option. This book is the ultimate proof of that. •
