  • There are few pairings that scream timeless.  There are few pairings that scream autumn.  Pork and apples is one of the pairings that does both.   • Made meatballs from scratch for the first time. They are mouth watering and very simple! #spaghettiandmeatballs 
1lb of ground beef (chunk) 
1 egg 
1 cup Italian breadcrumbs 
1/2 cup Parmesan 
1/2 tsp oregano
1/2 tsp garlic powder 
1/2 tsp thyme 
Made 18 meatballs - put them in a pan with 1/2 cup of spaghetti sauce and baked @ 350•F for 30 min, rotating them every 10 min.

  • Don't bother going to the South Portland Sam's Club, I bought everything. At least that's what it feels like! Best part is I forgot my list and pretty much stuck to it, no more and only one thing less! I had several things I needed and knew it's cheaper at Sam's so I went today and made a major haul, here is what I bought:
(Not pictured - winter coat for Mr1, only $30!)
Trash bags
Laundry detergent
Tissues
Batteries ( 2 sizes)
Shredded mozzarella cheese
Block cheddar cheese
Bananas
Case of Coca Cola (part for a gift and part for a treat for Mister )
Chocolate chips
Extra Virgin Olive Oil
Two sizes of tortillas
Unsalted and salted butter
Spinach
Romaine lettuce
Clementines
Apples (already put away)
Milk (already out away)
Aspirin (not pictured)
Chicken tenders
Peanut butter

  • Pumpkin Pasta🎃🧡// last night I thought I’d try my hand at making a homemade pumpkin pasta sauce. A few years ago I had a pumpkin pasta sauce from Williams Sonoma and it was so good, and I’ve always wanted to recreate it. This turned out really good. Fairly mild, and I think if I made it again I would spice it up a bit more and perhaps add some sautéed spinach and mushrooms, but as is I’d say it turned out pretty darn good! And a fun twist on pasta this fall season😋•

Here’s how to make it—-> 1. Cook pasta of choice (I did whole wheat rotini!) 2. Sauté one garlic clove with about 1/8 cup thinly sliced onion for about 5 min in olive oil 3. Add one tbsp flour and whisk 4. Add one cup half and half and continue whisking until bubbles fo and it thickens 5. Add 1/2 cup pumpkin purée and stir 6. Add desired spices! I did some salt, pepper, nutmeg, and red pepper flakes 7. Too with sundried tomatoes and parmesan😋 •

As always, you can mix this up however you want! Use veggies or your choice and spices as you wish! Let me know if you try it! ✨

🌟Batir 200 gs de manteca con 250 gs de azúcar. (Cremar)
🌟Luego si tenés colocá esencia de nuez, (sino de vainilla).
🌟Agregar de a uno 4 huevos y batir bien después de cada uno.
🌟Luego vas a agregar una mezcla de secos de : 250 gs de harina leudante, pizca de sal, y 50 gs de nueces procesadas (hechas polvo como una harina).
🌟Intercalar éstos secos con la mezcla de manteca y huevos, y 1/2 taza  de leche. 🌟Colocarle nueces y chocolate cortadas en trozos grandecitos. (3/4 tazas de nueces y 3/4 taza de chocolate en trocitos)
🌟Volcar en budinera alargada de 30 de largo (sale uno grande con ésta medida)
🌟Horno precalentado a 170° ...hasta que al pincharlo en el centro con un palillo éste salga seco. Serán aprox 40 o 45 min ...pero depende mucho de cada horno!
🌟Por encima coloqué chocolate blanco y nueces.

In another bowl, whisk together the egg yolks, milk, and oil. Whisk the egg/milk/oil mixture into the dry ingredients – it’s OK if there are some lumps. Stir in the cheese. Gently fold in the egg whites (a silicone spatula works well) until no white streaks remain. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

These are seriously the best roasted potatoes I have ever made!  Diced them, tossed in about a teaspoon of olive oil and seasoned with Epicure's Oven Roast and a pinch of Cajun spice blends.  Used my Ninja Foodi on tendercrisp for about 8 minutes and it's potato perfection!!

  • Курица в духовке с овощами 😋🐔🍗 Ингредиенты:
Курица - бёдра или окорочка - 1 кг (я обычно беру разделанные бёдра - без костей, они получаются более сочными, но в целом не принципиально);
Красный лук - 3 средних головки;
Помидоры черри - 5-8 шт. (Крупных)
Красный перец - 1 шт.;
Желтый перец - 1 шт.;
Зелёный перец - 1 шт. (Отлично подходят наборы из 3 перцев);
Тимьян - 4-5 веточек;
Зубчик чеснока - 5-8 шт. (Зависит от их размера);
Соль - 1 ч.л.;
Оливковое масло - 4 ст.л.;
Паприка - 1 ст. л. (можно с горкой, главное не переборщить);
Бальзамический уксус - 3-4 ст. л.;
Молотый чёрный перец - по вкусу (примерно 1 ч.л.). Способ приготовления:
Готовить очень просто! Включаем духовку на 180 градусов, режим конвекции. В глубокий противень кладём куриные бёдра или то что вы предпочитаете, главное чтобы размер кусочков был порционный.
Все овощи (лук, перец, помидоры) режем на кусочки примерно по 5 см., давим ножом зубчики чеснока, добавляем бальзамический уксус, оливковое масло, веточки тимьяна, паприку, соль и перец. Все перемешиваем и ставим в духовку на 45-60 минут - смотрите по ощущениям, главное не пересушить курицу!
И, вуаля, блюдо готово!

Just grab some dried herbs from your pantry or fresh ones from your garden or local supermarket and let your creative juices flow! Using a mortar, grind the herbs along with the salt, preferably sea salt if you have some, play around with the ratios of each until you’ve created that perfect mix and then store in a closed glass jar. Not only do these salts add extra flavor to your food, but they can also have wonderful natural medicinal benefits. So this sandwich is really a collection of things I love from @traderjoes ! It is easy to throw together, but you do have to plan a big ahead because the falafel needs 30-60 min to rise, then 20 min to bake. But the hands on time is like 5 minutes.

This Zhoug sauce is my new obsession!! It’s a spicy cilantro herb sauce and I LOVE it! You can dip naan straight into it, or use it to dress up veggies or protein. The naan itself is sooo good, but HUGE so I usually cut them in half (this whole naan sandwich is for @daniel_bears , mine was smaller!).

Falafel pita ingredients:

Substituting a small amount of mint for the cilantro, as we do not have fresh cilantro currently 🌿 Plus, not everyone enjoys cilantro, and this batch is for sharing. Are you a cilantro fan?

The hot peppers shown are Sugar Rush Peach and Black Hungarian. The Sugar Rush Peach peppers are pretty hot 🌶🌶 so I did remove some of the seeds (about half). The Black Hungarian, not so much heat.. more like a jalapeño.

  • things i learned about myself while eating this dinner: i am not a big cabbage fan 😐 there was some cabbage in my @greenchef box last week and the whole recipe was so delicious, so i thought i’d found a new veg to add in the rotation. turns out they used just the right amount and their sauce was 💣 vs me who used wayyyyy too much and improvised on the sauce. oh well. the rest was good 🙃 // sesame ginger ahi tuna steaks with brown rice, broccoli, and cabbage. and this was only about 1/3 of all the cabbage! tuna recipe by a blogger i can’t find on IG so i’ll post the recipe on my story. #redcabbage #ahituna #seafood2xwk
