  • Try a Cocktail Bun next time you pass a Chinese Bakery. The story goes that the owners of a Hong Kong Bakery were tired of wasting perfectly edible bread at the end of the day and so mixed the bread crumbs with coconut and butter to create a filling used in fresh buns for the following day, (hence 'cocktail,' as in to mix things.) A particularly nostalgic treat for me; these fluffy-soft buns with sweet, rich and crumbly coconut-filling make them a lovely Breakfast or Tea-Time snack.

INGREDIENTS:
7 Large Eggs
1/2  Cup Coconut Flour
1/2 Cup Butter (use 1/2 cup olive/coconut oil for dairy free)
1/4 tsp Salt
1/4 tsp baking powder
1/2 tsp xanthan gum (optional)

INSTRUCTIONS:
Preheat oven to 180 C (355 F)
Crack all 7 eggs into a bowl and mix for 1 minute until well combined.

Add all of the remaining ingredients, and mix again until completely combined. The mixture will become quite thick.
.
Line a 8.5" X 5" loaf tin with parchment paper, and pour the ingredients into the tin. Level the top with a spatula if uneven.

Bake for 50 minutes, check for doneness once a skewer comes out of the middle clean.
.
Slice and store in the fridge for up to 5 days, or 2 weeks in the freezer. This bread freezes well.

  • This is silky, beautiful Pan de Coco dough. 🥥🍞⁣⁣⁣

Flour, coconut milk, water, butter, sugar, and coconut flakes kneaded in a KitchenAid mixer for about 10 minutes, and this is what you get. A beautifully silky, strong dough. As you can see I added a handful of poppyseeds, which took it from great to WOW 😮.⁣⁣⁣

Instead of dry yeast, this uses sourdough starter, which gives it that healthy fermented tang.⁣⁣⁣

🍞💡 BREAD TIP: Being able to judge when your dough has been kneaded enough before bulk rising is a really important step in getting good end results. A great test is the "windowpane test". Grab a piece of the dough and gently pull it up. See how far it stretches while trying not to tear it. If you can see your fingers through it, or a bit of light, then it has a good amount of strength to move onto the next step.⁣

  • A lot of you have been asking for some homemade bread recipes so you can still enjoy bread without all its usual unhealthy features. This time, we've come prepared with Coconut Bread! It has just a bit of sweetness so it'll feel like more of a treat than just plain bread. Plus, there's 5 different, delicious possibilities that this recipe can turn into! Ingredients:
-1/2 C Organic Coconut flour
-1/2 C Xylitol (sweet version)
-1/2 t Himalayan salt
-6 Large, Free-Range eggs
-6 T Grassfed Butter
-1 t Baking powder
-1 t Vanilla (sweet version)
-or-
1 t Himalayan Salt (savory version)

Directions:
1. Sift dry ingredients together until blended.
2. In a separate bowl, combine wet ingredients, making sure to whisk the eggs first.
3. Pour batter into a buttered bread or souffle pan,and bake at 350 degrees F for 30-40 min.
Version 1 :  add 1 t Cinnamon and 1/2 ginger with 1 T organic molasses
Version 2 : add 2 T almond butter and 1 T raw cocoa powder
Version 3:  pour into a bread pan  for sandwich bread
After 10 min. of baking, brush some melted butter on the crust and sprinkle with Himalayan salt and mix of small seeds on top (poppy, caraway, fennel, sesame, pepper, etc…)
Version 4: Pour batter into a shallow pan (like the bottom of a broiling pan) and make into a foccacia (pizza) – top with garlic, veggies and cheese
Version 5: Pour 3 T batter to make individual buns, onto a cookie sheet, spacing 3 inches apart for growth. Bake for 15-20 min. Brush with butter the last 5 min of baking.

  • Sooo this coconut bread been blasting my feed all day and I had all the ingredients so I tried it. It literally only took like 10 minutes to prepare and then 50 minutes to bake. Receita super gostosa e está no Igtv! Fiz uma leve alteração na quantidade de óleo: ⁣

6 Ovos (de preferência orgânicos) ⁣
1/4 xíc. de óleo de coco derretido⁣
3/4 xíc. de farinha de coco⁣
1/2  col de chá de sal marinho⁣
1 col de sopa de de nectar de coco ou mel⁣
1 col de chá de fermento em pó (uso versão sem alumínio)⁣
Instruções:⁣
Preaqueça o forno a 350F ou 180C⁣
Deixe a forma de pão já pronta untada com óleo ou com papel manteiga⁣
Misture ovos, óleo e néctar de coco em um bowl grande e misture bem⁣
Inclua a farinha de coco usando uma peneira e o fermento em pó⁣
Misture bem e transfira para a forma de pão (não demore muito nesse processo para evitar que a massa resseque)⁣
Coloque a massa na forma (uso formas pequenas para pães s/ glúten) e dentro do forno por 45 minutos.⁣
Opcional de incluir lascas de coco por cima da massa, apenas retire a massa do forno após 15 minutos, salpique as as lascas por cima e coloque de volta no forno! ⁣

Place the dough in the bread pan and inside the oven for 45 minutes.⁣
