  • I don’t know about y’all but when ever this Mama goes to cook a meal, well, let’s just say her hands are always full. So when I got asked to trial the new Crock-pot XL I jumped at the chance! I love all of the cooking options and I’m a huge fan of the fact that it also slow cooks!!!! I pop our meals on either in the morning or before the kiddies get home from school and don’t have to think about it again until it’s time to feed the tribe! #ad

  • Roasted red bell pepper, asparagus and sautéed spinach with a cream sauce over chicken thighs. 
1️⃣-2️⃣packs of chicken thighs
1️⃣cup of diced roasted bell peppers 
1️⃣cup of diced asparagus 
1/2 yellow onion 
4️⃣garlic cloves 
1️⃣1/2 cups of chicken stock 
6oz of cream cheese. 
1️⃣cup of spinach.

➡️First pre heat oven to 350°. Season chicken thighs with garlic salt, six pepper spice and cracked pepper. Melt 1 tbs of butter in a pan and Sear over medium heat until golden brown. Lay chicken thighs on a baking sheet lined with tin foil and place in oven for 15mins.(I usually wait until I’ve sautéed all my veggies for my sauce before I put chicken in oven.) ➡️for the sauce: In the same pan you seared the chicken in add in diced yellow onion. Cook for about 5 mins until translucent. Then add in diced asparagus. Cover pan with lid and cook about 5-6 mins. Remove lid and add in roasted peppers then add in spinach. Season with garlic salt and pepper. Once spinach has wilted down add in chicken stock. Bring to a boil then add in cream cheese. Let cream cheese melt down and mix the sauce until we’ll combined. Turn heat to a low and let sauce thicken up. (If it’s to runny add in more cream cheese. Or if it’s too thick add in more chicken stock) once chicken thighs are done place a spoonful of sauce over the top and serve with any kind of vegetables. 🙌🏻🤤.

  • Another plate of assorted food which is just a mix of what I want at that moment tbh🙈 I know it is odd to see such savory and sweet combo in one plate but who cares you are you and you own your life haha😁 In the plate, sautéed onion, spinach, bell peppers with omelette and on the side some fruits and cucumbers 🥒 Couldn’t help eating mangoes in every meal🙈😋🥭✌🏼

INGREDIENTS (Servings 4):
•	1 large chicken breasts sliced horizontally to create 4 fillets (1 1/2 pounds).
•	1/4 red onion, thinly sliced.
•	1.50 bell peppers, thinly sliced (any mix of colors).
•	4 flour tortillas.
Chicken Fajita Marinade:
•	1 tablespoon olive oil.
•	1.50 tablespoon brown sugar.
•	1 tablespoon orange juice.
•	1 tablespoon lime juice.
•	1 tablespoon reduced sodium soy sauce.
•	0.50 tablespoon Dijon mustard.
•	0.50 tablespoon chili powder.
•	3/4 teaspoon ground cumin.
•	0.50 tsp EACH garlic pwdr, onion pwdr, salt.
•	1/4 tsp EACH smoked paprika, chipotle chili pwdr, dried oregano.
•	1/8 teaspoon pepper.
•	1 teaspoon liquid smoke.

INSTRUCITONS:
1.	MARINADE: In a large freezer bag, whisk together all of the Chicken Fajita Marinade ingredients. Remove 2 tablespoons to use later for vegetables. Add chicken to freezer bag and toss to coat. Marinate in the refrigerator 6 hours up to overnight (longer the better).
2.	CHICKEN: When ready to cook, let chicken sit at room temperature for 15-30 minutes. Heat 1 tablespoon olive oil in a large skillet over medium high heat. Once very hot, dab excess marinade off chicken and add to skillet. Cook chicken undisturbed for 2-3 minutes, or until nicely browned (or blackened if you prefer) on one side. Turn chicken over, cover, and reduce heat to medium. Cook for approximately 2-4 more minutes (depending on thickness of chicken), or until chicken is cooked through. Remove to a cutting board, tent with foil and let rest 5 minutes before slicing across the grain into strips.
3.	VEGETABLES: Meanwhile, Add 1 tablespoon oil to the leftover juices in the skillet along with reserved 2 tablespoons marinade. Heat over medium high heat. Add onions and saute 1 minute. Add bell peppers and saute for 3-4 minutes or until crisp-tender. Add sliced chicken and toss to coat.
4.	ASSEMBLE: Layer tortillas with Chicken Fajita mixture and desired toppings.
