  • After being unhappy with the macaroni cheese I had yesterday, I thought I'd share my baked 3 cheese macaroni cheese recipe

This is how I make baked cheesy pasta in a rich cheese sauce, with a crunchy seasoned cheese & breadcrumb topping. All dairy free and vegan of course. I'll pop the recipe below if you want to try it out💚

Yield: 3-4 servings Cook time: 35 minutes. You’ll need
45g/1.5oz dairy free butter
45g/1.5oz all purpose plain flour
450ml warm plant milk
100g/3.5oz dairy free cheese. I used 40g/1.4oz mature cheddar alternative by @asda, 40g/1.4oz @kokodairyfree cheddar, and 20g/0.7oz @sainsburys vegan Italian hard cheese style
100ml dairy free cream
1 teaspoon of dijon mustard
300g/10.5oz (dry weight) pasta

For the cheesy, breadcrumb topping you’ll need
65g/2.3oz grated dairy free cheese
1 teaspoon of dried mixed herbs
1 and a half tablespoons of breadcrumbs
A pinch of black pepper

Method

Add the butter and flour into a small saucepan over a low-medium heat. Once melted together, allow the mixture to cook for three or four minutes, whisking often. Next you can move on to slowly adding the milk, a little at a time, until it’s all incorporated

Whisk the cheese through the sauce, and then add in the cream and mustard. Allow the cheese to melt, and the sauce to fully come together, this will take a few minutes. While you’re working on the sauce, boil the pasta as per the instructions on the packet

Once the sauce is done, and the pasta is cooked, drain the pasta well and stir it through the sauce. Check the sauce for seasoning and add salt and pepper if needed

Then add the pasta into a oven safe dish, top with cheese, herbs and breadcrumbs. Finally sprinkle with a pinch black pepper, then bake for around 15 minutes at 220°C/200°C fan assisted/400°F. Or until the cheese on top is melted, and the breadcrumbs have begun to go golden and crispy. Leave it to stand for five minutes before serving

  • Adding carbs to anything makes it 500x better so when I heard about the latest @pattyandbun @padella_pasta collab I was SO excited 😍 Padella has been on my list forever (but I've never braved the queues!) and back when I first moved to London and was burger obsessed, @pattyandbun were one of the first I tried and their Ari Gold will forever have a special place in my heart 😌🥰 Exclusive to the @pattyandbun LB site, their latest collab features Padella's Cacio e Pepe (could they have chosen a better option!? 😍) and nduja mayo on top of their classic beef patty 🍔☺️ I thiiiiiink I had too high hopes for this, it wasn't as good as it had the potential to be (needed more pasta 🙊) but a great try nonetheless.. and their fries are always crispy AF😍 #invite

  • Soooo delicious at 4 syns 🥰!! Cheesy creamy pasta and leeks!! 1 onion 
2 leeks thinly sliced
1 and half garlic clove
4tsp cream cheese 
600ml chicken stock 
Pasta 
Health extra cheddar cheese 
Frylight your Pan or wok add@the garlic onions and leek with some salt and pepper and a drop of chicken stock. Let that cook and then add your cream cheese.  Add your pasta and the rest of your stock, simmer until the pasta is cooked. Add your cheddar cheese and let it’s melt into the pasta 🥰🥰!! #cheesypasta#slimmingworld#delicious#foodporn#lowsyn

Ground Pepper

To Make White Sauce
Butter - 1TBSP
Maida - 2 TBSP
Milk 2 CUPS
Processed Cheese 150 GMS
Italian Seasoning - 1/2 TSP 
Red Chilli Flakes - 1/2 TSP
Ground Pepper
Basil leaves 
Salt

Method
1.Cook the pasta with some salt till it is 3/4th done
2.Strain it and keep it aside 
3.Heat a pan with olive oil, add chopped garlic and saute 
4.Add onions, carrots, broccoli, capsicum, olives and stir fry them on high flame 
5.Keep the vegetables aside 
6.Heat a pan with some butter, once the butter is melted add maida and mix it well 
7.Slowly add milk to it and whisk it well 
8.Make sure that there are no lumps 
9.Add grated processed cheese and mix well 
10.Once it is combined well, add salt, Italian herbs, red chili flakes, pepper powder 
11.Mix everything well 
12.Add the cooked vegetables and pasta 
13.Let the pasta cook for about 10 mins 
14.Finally, add basil leaves and parmesan cheese and serve the pasta hot.
