  • •PLANT-BASED AND RIDICULOUSLY QUICK AND EASY CURRY - KEEP READING FOR THE RECIPE• I’m having a chickpea and spinach curry for dinner tonight along with my cheat’s chapatis (some leftover wholewheat tortilla wraps that I’ve just lightly roasted on a dry pan). Don’t get me wrong - I love freshly made chapatis (especially when it’s made by my mum 🥰) but sometimes needs must when you’re short of time! Traditional chapatis are literally chapati flour (essentially a type of bread flour) and water. Very simple and perfect for mopping up a curry like this. Have a go at the curry?

Recipe
1 red onion
3 cloves garlic
1 thumb size piece of ginger
2 large tomatoes, blitzed to a purée
1 tablespoon tomato purée
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon dried mango powder (amchur) - optional
1 teaspoon salt
1/2 teaspoon chilli powder/paprika
1/2 teaspoon cumin seeds
2 large handfuls spinach
400g tin chick peas, drained
..
1. Blitz together the onion, garlic and ginger until a paste.
2. Heat a teaspoon of oil, put the cumin seeds in for a minute and then put the paste in. Sauté for 5 minutes, then add the tomato purée, salt and spices. Sauté for one further minute and then add the tomatoes, chick peas and spinach.
3. Cook for a further 5-7 minutes, adding a splash of water if too thick. Serve with a sprinkling of fresh coriander (and fresh chillies if you dare!)

  • Ważne jest, aby po ciężkiej pracy się nagradzać :) Na zdjęciu ja w jednej z Wrocławskich indyjskich restauracji. Mało kto wie, ale przez te wszystkie lata pracy jako kelner i menedżer pracowałem właśnie w restauracji indyjskiej. Od czasu do czasu lubię wrócić do tych smaków. Muszę też przyznać, że odwiedzając coraz to nowe indyjskie miejsca stwierdzam, że restauracja, w której pracowałem przez te wszystkie lata pozostawiała wiele do życzenia pod kątem kulinarnym. Jaki z tego wniosek?

Czasem robimy coś przez lata i wydaje nam się, że tak jest dobrze. Jednak, gdy życie zmusza nas do zmian to nagle okazuje się, że świat oferuje o wiele więcej lepszych rzeczy. Zachęcam więc wszystkich do szukania nowych smaków i przygód.   • This week’s legume claim to fame are chickpeas. And what better dish to showcase this delectable legume than the popular Indian (vegetarian) dish, Chana Masala. Admittedly, this was my first time cooking this dish; it definitely is a standout in flavours as there’s a lot of spices involved however, admittedly, I think that I made it a bit too spicy for Bianca’s liking. 😬 Note to self: less chilli next time and we should be a-okay. 👌

  • Welcome to a new week friends. Last week was quite busy for me and I expect some personal commitments this week too. But let’s forget all the hassles life throw at us and indulge in some good, soul satisfying food. This Chana Masala will help you sail through the tricky times, I assure. Ingredients
1 cup Chickpeas / Chole
1 Black Tea Bag
3 cups Water
2 tsp Salt
1 inch Cinnamon
2-3 Clove
1 Black Cardamom
1 pinch Baking Soda Optional
3 tbsp Ghee
2 tbsp Oil
1/4 tsp Hing
1 cup Onion Grated
2 tsp Ginger Garlic Paste
1 tbsp Coriander Powder
2 tsp Kashmiri Red Chilli Powder
1/2 tsp Turmeric Powder
1/2 tsp Roasted Cumin Powder
1/2 tsp Ginger Powder
1/2 tsp Garam Masala Powder
1 tbsp Anardana Powder
1/4 cup Curd Whisked
1/4 cup Tomato Puree
2 tbsp Kasuri Methi
2-3 Green Chilli Slit into half
Ginger Juliennes
Instructions
Wash the chana and soak in water for 6-8 hours.
Drain the water and wash the chana once again.
Add them in a pressure cooker along with tea bag, water, salt, cinnamon, cloves, black cardamom and baking soda.
Pressure cook for 5-6 whistles on medium low heat.
Remove the cooker from heat and let the pressure release.
Heat ghee and oil in a pan.
Add hing and onion and fry until onions turn slightly brown.
Add ginger garlic paste and fry for a minute.
Add coriander powder, red chilli powder, turmeric powder, cumin powder, ginger powder, garam masala powder and anardana powder and fry until oil starts to separate.
Add little water if the masala gets too dry.
Add curd and tomato puree and cook for 2-3 minutes.
Add the cooked chana along with the water in which they were cooked in the pan.
Add some more water if the chana are too dry.
Cook for 2-3 minutes.
Add kauri methi, green chilli and ginger juliennes.
Serve hot with kulcha or bhature.

Chole Masala .
Ingredients
Chickpeas 200gm boiled
Peeled and boiled potatoes 100 gm
Chopped onions 150 gm
One small onion finely chopped
Tomatoes 2 medium sized chopped
Garlic ginger paste 1 tbsp
Green chilies chopped accordingly 
Cumin whole 1tsp
Everest chola masala 1tsp
Garam Masala 1 tsp
Bayleaf 1
Turmeric powder 1 tsp
Salt for taste 
Oil 50gm

Procedure
1. Add oil in a pan. Medium heat. Add bayleaf and onions and fry till light golden. 
2. Then add chopped tomatoes. Fry till softly cooked. 
3. Then add ginger garlic paste, chillies, turmeric powder and cumin. Cook for few mins. 
4. Then take the pan off the stove. Cool the contents and then grind into a fine paste. 
5. Then again add 1 tbsp oil in the pan on medium heat and add finely chopped onions and cook till golden brown. Then add potatoes till golden colour. Then add the curry paste. Cook for 1-2 mins 
6. Add water and the boiled chickpeas. Add salt, Garam Masala, and Everest chola masala. 
7. Cook for 10-15 more mins and serve hot with the kulchas/roti/bhature. .
