I have not made damper since Zach was 7 or 8! Wow...have I been missing out!
@davethompson83 Was geared up to make a damper so we winged a recipe together, bit of this and a bit of that!
It was bloody delicious so here’s the rough recipe.
500g self raising flour
2 good handfuls of grated cheese of your choice. We used Monterey Jack.
1 Spanish onion diced
1 bunch of chopped chives
1 tsp dried chives
1 tsp smoked paprika
1 tsp fennel seeds
Salt & pepper
2 tsp of dried rosemary
2 heaped TBLS sour cream
Milk to bind till it’s combined as a soft dough but not sticky. .
Dice the butter up and rub the butter and flour together till it’s a sandy texture. Add all the other ingredients.
Spoon in the sour cream and mix till combined, add milk and mix until you get a soft dough but not sticky.
If it is a little to sticky add a touch more flour.
Cook in a camp oven in a tin on a trivet
1 shovel of coals below and 1 on top for about 40-45mins.
Enjoy right out the oven with lashings of butter! .

There was a solid argument about the best way to get crackling on our pork roast before this 😂 Tom won out and absolutely nailed it!! Rub with oil and salt, add a little water in the bottom, then hot coals on the top for the first forty minutes 👍 before adding coals to the bottom as well.
