  • WHO’S BREAKING THEIR FAST ON THIS?
.
With my blog still down (it's a work in progress), I wanted to share these Gluten Free Cinnamon Buns because I get so many requests for them every single fast day. So here's the recipe 👇🏻
3 cups almond flour
½ tsp salt
¼ tsp baking soda
¼ cup neutral oil
2 Tbsp honey (or pure maple syrup)
2 eggs, room temperature
Filling:
½ cup honey
½ cup coconut sugar (or brown sugar)
1 Tbsp ground cinnamon
.
Preheat the oven to 350 degrees F. Whisk the almond flour, salt and baking soda. Separately, whisk the oil, honey and eggs. Combine them in to smooth dough. Since the dough is sticky, refrigerate for 10 minutes.
Place a large piece of parchment on the counter, then add the ball of dough, and top with a second piece of parchment. Roll out the dough to a 9×13 inch rectangle. Discard the top piece of parchment then drizzle the dough with the honey. Combine the coconut sugar and cinnamon then sprinkle the mixture over the honey and spread it out all over the dough.
Carefully, using the bottom piece of parchment paper as a guide, roll up the dough from the wider side, keeping it tight as you roll. It’s okay if there are some funny creases and rips in the dough but be careful not to rip it too much.
Slice the dough in half lengthwise with a sharp knife or bench scraper, leaving the top few inches in tact. Carefully open the dough to reveal the layers inside. Twist the halves over each other then connect the end together to create a circle.
Transfer to a 9-inch round baking pan and bake for 30-35 minutes. If you want to keep the ring shape, place an oven-proof mug or small bowl in the center of the dough before you bake. Grease the mug or bowl before baking.
Cool then slice and enjoy! Top with pure maple syrup and crushed nuts or your favorite cinnamon bun icing.

  • I find so much inspiration on @instagram especially with respect to food styling. It’s not my forte so I look to my friends like @thedelicious to help me present food more beautifully. I used Sarah’s lox platter image to help me create this one without having to overthink it.
The next slide is a cake made by Gemma, my friends’ 13-year-old daughter. Not only was it gorgeous, her cake tasted amazing!!! I’m always inspired by her creations. What are some of your favorite accounts to inspire how you present your food? #bagelsandlox #loxplatter #yomkippur #breakingthefast #pamelasalzman
