  • The Perseverance, Bloomsbury. 
A handsome looking corner drinker thatโ€™s been trading since the 1850s in the heart of leafy Bloomsbury. Originally The Sun, its a beautifully maintained simplistic yet naturally grand building in keeping with the architectural style of the area. 
Iโ€™d not visited in many years and it was pleasant popping in early doors on Saturday evening. Inside is spacious with chandeliers yet with a casual feel to the pub. I particularly enjoyed the quiet upstairs room which was a little haven away from the busy ground floor and is a sweet spot to look out the window and people watch from down into the street. The clientele can be a little touristy as the British Museum is just around the corner but from memory, in the week, you get a diverse mix of punters. Standing outside and enjoying the sun in the early evening is also popular here and the seats are rarely empty whenever Iโ€™ve walked by. 
Staff were friendly and what I particularly enjoyed was being served by a bloke who looked like a pirate. The 1980s goalkeeper moustache was class (Tony Cotton, Dave Seaman & Martin Thomas) would have been proud) and the long hair with the flannel like open shirt and stubble was just a portcullis in-hand away from thinking Iโ€™d walked into Treasure Island. The Gibson is the perfect tipple after a f*cked day. Isn't it? Plus there is a snack ๐Ÿ˜‰ on one of my new picks courtesy of @surfsidesips.

Recipe:
- 2 oz Opihr gin
- 2 oz Dolin dry vermouth
 Stir with plenty of ice until very cold. Strain into a chilled cocktail glass (courtesy of @dcplateking). Garnish with a cocktail onion. ๐Ÿ’™๐Ÿ’™๐Ÿ’™
When you make something as simple as this you can't hide inferior products. Everything has to be delicious. In addition to being tasty, I wanted my Gibson to have a touch of spice. ๐Ÿ˜Š @opihrgin really does well in this one. A normal London dry would work here as well, but you will get the same amount of savory notes that made this one so wonderful.

I went equal parts for this one. I prefer to taste the vermouth in my Martinis. Especially, the crisp and refreshing @vermouthdolin. That nonsense of adding a single drop of vermouth to a Martini is... well, nonsense. You do you, but if I'm drinking straight gin, I'm not gonna water it down. I want it straight. I want to taste the nuance. But in a cocktail I like to  go for a heavy handed pour of the fortified and aromatized wines.

  • Happy World Whisky Day! Scotch is one of the more recent liquors that Iโ€™ve gotten into but havenโ€™t been mixing enough with it. Letโ€™s fix that with a Rob Roy, the scotch-loverโ€™s answer to the classic Manhattan. Normally the recipe calls for a nice blended whisky, but I had a bottle of Lagavulin 16 so this will be an extra peaty one.

For vermouth I chose @standardwormwooddistillery Semi-Sweet Wermut, a rosรฉ based vermouth. If it werenโ€™t for them, I wouldnโ€™t have known that โ€œvermouthโ€ is the French pronunciation for โ€œwermutโ€ which is German for wormwood, an ingredient originally used in vermouth. The more you know!

And although Game Of Thrones now seems to be more โ€œthe winter of our discontentโ€ than โ€œwinter is comingโ€ we decided why not post it for the grand finale. ๐Ÿ˜‰ So here it is!โ€ข

11/2oz Barking Irons Applejack 
3/4oz Punt E Mes
3/4oz Campari 
1/4oz Fernet Branca 
Scant bar spoon Combier Kรผmmel 
Garnish: Lemon oils, Star Anise โ€ข

Add all ingredients to a mixing glass. Add ice and stir until well chilled. Strain into a chilled Nick & Nora or Coupe. Express lemon oils and discard, top with Star Anise. Enjoy!

Just like the characters in the show, itโ€™s full of flavor, bitterness and complexity but extremely balanced. The Barking Irons Applejack provides the necessary backbone and proof to allow all the other ingredients to shine while still maintaining its presence. If youโ€™re a fan of stirred/bitter youโ€™ll love this but itโ€™s balanced enough for all palates willing to try something new. You can almost taste the rust on that Iron Throne! ...in a good way๐Ÿ˜โ€ข

Recipe:
- 1 3/4 oz blanco tequila (@eljimadortequila)
- 1/4 oz mezcal (@delmagueymezcal)
- 1 oz Cointreau (@cointreau)
- 1/4 oz agave syrup
- 3 1/4 oz filtered water
- small pinch of salt
- 3/4 oz lime juice
๐Ÿ˜
Mix everything but the lime juice in a container and pour into a freezer Ziploc bag. Get as much air out as possible and put in the freezer overnight. (Set your freezer temp to it's lowest temperature, -4 degrees or lower.) It should turn soild in the fridge, but can still be squeezed by hand.

Just before serving, juice your lime and add that to a blender. Dump the frozen ingredients into the blender. Blend for a couple of seconds until it is combined. Serve in a chilled glass and garnish with some lime.

This recipe is adapted from @cookingissues's technique for freezer drinks outlined in his book, Liquid Intelligence. In case any of you are going to make this, it's important to keep the water, sugar, and alcohol content the same if you tinker with the ingredients or it won't be the right consistency (or may not even freeze). If you screw around too much, you'll end up drinking a really cold and watery Margarita.

  • Excited to be out there in Jalisco, Mexico learning about and sipping all of the Patron @patron. Agave is one of my weak categories, but I have had some amazing opportunities this year to learn from others, also meet new friends. I am looking forward to this trip and other ones to learn more about agave spirits and the people behind them.

I made this margarita just before the trip. The recipe is by Stephanie Teslar, when I saw celery in the ingredient list, I just couldn't pass it.

Wildfire Margarita

1.5 oz Patrรณn Silver @patron 
0.5 oz Giffard Banana
0.25 cup chopped celery
0.75 oz lime
0.5 oz honey syrup
(Tajรฎn salt rim)

Muddle celery in the shaker lightly then add all ingredients. Shake and strain, garnish with a celery ribbon. I omitted the salt rim, instead, I just dashed a pinch of salt into the drink.  Celery and banana, what a genius, it is one of the most delicious and unique margaritas I have ever had.
