  • Years ago I found this recipe for banana bread with honey and apple sauce. 
No sugar 
No butter
I am not sure who created this recipe first because it’s circulating with many different authors

Preheat oven to 350 degrees F 
In a large bowl mix together 2 cups of flour, 1 teaspoon baking soda, 1/4 teaspoon salt 
In another bowl mix 3 ripped mashed bananas, 1/2 cup unsweetened apple sauce, 3/4 cup honey, 2 eggs beaten and 1 teaspoon vanilla 
Pour the wet ingredients over the dry and mix until just combined 
Pour in greased 9x5 inch loaf pan and bake in the preheated oven for 50 to 55 minutes 
I added a 1/4 cup of chocolate chips, it’s optional.

  • Pre-birthday baking sesh. Chocolate-chip sourdough banana bread, made with 50/50 wholewheat and plain flour. With some cupcake versions to prevent overflow. Probably my 3rd or 4th time making it now, using @joshuaweissman 's sourdough banana bread recipe. Always takes way longer to cook so the edges are kind of dried, just on the edge of being burned. Really works though, a crispy exterior to soft inside. My note for next time is I need to stop fucking about with the oven when it doesn't cook in the initial hour of baking time. Just leave it on, slap some foil on top and check on it so it doesn't burn. None of this 3 hours total baking time because of indecision- ovens got to be hot for it to cook.

  • Roasted Tomato Basil Soup with Melty Grilled Cheese 😩 everything I needed in my life today.

To make this sexy soup, slice 3 1/2 pounds of plum tomatoes in half lengthwise and place them insides up on a lined baking sheet. Spray or brush with olive oil, sprinkle on about 8-10 small minced garlic cloves, season with salt and pepper, and bake for 45 minutes at 400 degrees.

When there are 15 minutes left of baking time for the tomatoes, slice up 1 large yellow onion and sauté in 2 tbsp olive oil on medium heat until very soft, about 15 minutes. Toss every few minutes.

Take the tomatoes out of the oven and let them cool for 10 mins, along with the onions.

Place the tomatoes and onions in a good blender and add 1 cup packed fresh basil leaves, 2 tbsp olive oil, and 1/2 cup grated parmesan cheese (optional). Blend until smooth. Season with salt and pepper to taste.

Pour the blended soup into a large stovetop soup pan and simmer for 5-10 minutes to let the flavors pop. Optionally add 1 cup vegetable broth for a thinner soup, 1 cup heavy cream for a creamier soup, or 1 cup full fat coconut milk for a creamier, vegan soup. I didn’t add anything because I think the soup tastes fresher that way!

While the soup is warming, make the grilled cheeses. Slice two large pieces of sourdough (about 3/4” thick) in half and layer thin slices of sharp cheddar and gouda cheese in the middle (this will make two grilled cheese sandwiches). I used about 2 slices of each kind of cheese for each sandwich. Brush the sandwiches with olive oil, season with cracked pepper, then cook in a skillet pan sprayed with olive oil on medium heat. To get the browned look, put a heavy plate on top of the grilled cheese. Cook for about 5 mins on each side or until cheese is melty.

Top the soup with fresh feta, extra basil leaves, and extra virgin olive oil. Dip in the melty grilled cheeses and enjoy! Makes about 4-5 servings of soup.

  • When life gives you almost rotten bananas- make banana bread! No that’s not it... Its not the same as lemons...I tried! The kids and I are so stuffed up we can’t even taste it but it looks pretty! we added chocolate chips only on the top like @courtliknit 😀

i’m still on the floor, in shock, resisting help, at the fact that we’re nearly halfway through December and I am so ready for a new year 🙏🏽 Leaving some things behind in 2019 (like my FILA sneakers, walnuts because I’m mildly allergic, and my trusty loaf pan because I literally can’t find it anywhere) but I’m for SURE bringing this recipe with me. who’s going to make this? Banana Bread Layer
1 ripe, mashed banana 
2 tbsp almond butter 
2 tbsp coconut oil, melted & cooled 
1 tsp vanilla
3 tbsp honey (or maple syrup)
1 egg 
2/3 cup almond flour 
1/4 cup coconut flour
1/2 tsp baking powder 
2 tbsp almond milk 
1/3 cup dark chocolate chips

Chocolate Banana Bread Layer
1 ripe, mashed banana

3 tbsp honey (or maple syrup)

Preheat oven to 350 degrees, and grease a 9” cake pan with coconut oil, or line with lightly greased parchment. Starting with the bottom, regular banana bread layer. Beat egg and mix with mashed ripe banana. Add almond butter, melted and cooled coconut oil, honey or maple, and vanilla extract. In a separate bowl, whisk together almond flour, coconut flour, and baking powder. Combine wet and dry ingredients, now adding in the almond milk to help everything come together. Fold in chocolate chips. Transfer the first layer to the pan. For the second chocolate layer, follow the exact same order as before - after you add the almond milk, add cacao tbsp by tbsp to ensure it is thoroughly mixed in. Fold in chocolate chips. Add chocolate layer on top of regular layer. Bake for about 25-30 minutes until cake’s edges are golden brown and knife inserted in center comes out clean. Let cool and serve immediately!

  • La versión del #bananabread #singluten es de mis favoritas!

INGREDIENTES:
* 50 gr. harina de arroz (la venden en mercadona)
* 50 gr. harina de trigo sarraceno
* 1/2 cucharadita de levadura en polvo (la venden libre de gluten)
* 25 gr. Almendra molida
* 25 gr. macaccino @iswariofficial (Mix de cacao, azúcar de coco y maca) puedes sustituirlo por la misma cantidad de cacao puro en polvo
* 10 gr. azúcar de coco o eritritol * 1 huevo
* 50 gr. de claras * 1 plátano muy maduro * 50-80 ml. De agua
PROCEDEMOS!
- unimos todos los ingredientes secos en un bol.
- Chafamos el plátano en un bol, añadimos el huevo y la clara y batimos.
- Incorporamos los ingredientes húmedos a los secos.
- Agregamos agua para que nos quede una masa espesa pero jugosa. Más o menos 60 mililitros.
- Agregamos nueces y chips de chocolate o una onza en trocitos.
- Vertemos en un molde de silicona y horneamos a 180º (precalentado) 20 minutos.

Comerlo con un poco de mantequilla de almendras de @mybodygenius es puro vicio! 🥰

  • i’m gonna be such a cool mom when I tell my kids they can have cookies for breakfast 😏 and you can have them, too! with these insanely delicious BANANA BREAD COOKIES 🍪🍌😍 although we ate these for breakfast, mid morning snack, lunch dessert, appetizer, dinner dessert, you get the point- they’re perfect for any time of day and will hit the spot every time! happy baking!
