Ho chiesto alla signora da cui prendevo le uova se mi prestava una gallina e così per la prima lezione abbiamo fatto le meringhe e le uova strapazzate, imparando tutto su questo ingrediente meraviglioso ( lo sapevi che l’uovo di struzzo è forte abbastanza per reggere il peso di un uomo adulto?!) incominciando non sapevo che mi sarei appassionata così tanto, ma quante cose avrei imparato con i miei piccoli chef e che il mio pollice grigio avrebbe preso poco a poco delle sfumature verdine.. si può dire quindi che è nato prima l’uovo e poi Kids in the Kitchen e non vedo l’ora di condividere i prossimi progetti e collaborazioni! 😁

  • Baking with a toddler means you don’t level the flour or measure too precisely. It means more flour on the counter. More small bowls to clean. It also means A LOT more fun.🖤

Here is the recipe we made this weekend. We kind of went with it as we baked and they turned out great! Measurements are VERY rough estimates because I don’t care what you read, it doesn’t have to be exact in my book.😉☺️

Double Chocolate Chip Cookies
.
1/2 cup (1 stick) unsalted butter
1/2 cup organic white sugar
1/2 cup dark brown sugar
1 egg
1 tsp pure vanilla extract 
1/2 tsp baking soda
1/4 tsp salt
1 1/4 cup all purpose or wheat flour
1/4 cup cocoa powder
1 tbsp water (if dough seems dry)
1 cup dark chocolate chunks
.
Beat butter and sugars. Add egg, vanilla and dry ingredients. Add in water if dough seems too dry. Mix in chocolate. Bake for about 9-10 minutes at 375 degrees. Enjoy! Makes about 18-20 cookies.

As I left for a movie on Sunday afternoon I told what the kids could eat meanwhile should they get hungry.
I neglected to tell them what not to eat 🤦🏼‍♀️
Take a wild guess if there were any gingerbread left when I came back from the movie 🤦🏼‍♀️
You'd think they were toodlers to behave like this, but mine are teens and pre-teens 😂
Well, this was the first batch for this year, and I didn't double it... And I didn't say don't eat them.. kids 😂

  • Banana Muffins 
I’m playing around with some of my old recipes. Using less starch and less sugar. So far so good 👌🏻 Let me know if you try these. Tag me in your stories or your insta post. Or just send me a pic 😆

1 1/2 cups certified gluten free oat flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon (or a drop of DōTERRA Cassia)
1/4 tsp sea salt
1 egg, or a flax egg
1/4 cup melted coconut oil 
1 tsp vanilla extract 
1/2 cup coconut sugar 
1 cup mashed banana (1 1/2 bananas)

1. Preheat oven to 350 degrees and prepare muffin pan. 
2. Combine flour, baking soda, baking powder, cinnamon, and sea salt in a large bowl. 
3. Whiz egg, coconut oil, vanilla, sugar and banana in a blender or bullet. 
4. Add wet ingredients to dry. Stir till combined. 
5. Spoon batter into prepared cups and top each muffin with a few chocolate chips or chocolate chunks. We use @enjoylifefoods chocolate. 
PS If you’re oily, add a drop of cassia or cinnamon bark and a drop of cardamom. Next level oh yeah a la @nourishyouptbo ☝🏻

  • Raspberry Jam Straws 😋

This is a brilliant recipe to get the kids involved in helping. Made with just 3 ingredients they’re fun, colourful and really tasty! I’ve used raspberry jam but you can use whatever jam you have at home.

You can also use Nutella even make them savoury with pesto and a sprinkling of Parmesan.

INGREDIENTS
* 1 sheet of puff pastry
* 2 tbsp raspberry jam
* 1/2 tbsp brown sugar

INSTRUCTIONS
1. Preheat the oven to 200c / 400f and line two baking trays with parchment paper.
2. Unroll the pastry and cut it in half width ways so that you have two equal sized rectangles.
3. Spoon the jam onto one half and spread it all over the pastry. Place the other rectangle of pastry on top and press down.
4. Cut the pastry widthways into strips of about 1/2 inch thick (or about a thumb width). Twist each strip, cut in half and place on the baking tray. Sprinkle each straw with a little brown sugar.
5. When all of the pastry strips are ready, bake in the oven for 10 minutes, turning half way.
6. Allow to cool just for a couple of minutes before serving as the jam will be super hot!

  • Apple and Custard Tart 🍏🍎🍏🍎🍏 Me and the littlest actually made this a week ago, I'm just hideously behind with the old postie mc posts at the moment. This was delicious though so I thought better late than never 🤣

I've thrown the recipe down below but a few tips- peel and chop about 5 apples before you start and sprinkle with cinnamon, preheat the oven to 150°C and while the base is cooking make your strips and decorations with the remaining pastry so that you can pop them straight on top after filling the tart.

For the sweet pastry we rubbed 150g butter into 300g plain flour and 50g icing sugar. We bound it into a dough using a few tablespoons of cold water.
We rolled it out and pressed into a 9" pie dish and blind baked for about 15 minutes (ours could have used another 5 if I'm honest)
While it was in we mixed 2 eggs with a tablespoon each of cornflour and sugar, 200ml milk, and teaspoon vanilla in a jug.
We took out the blind baked case, filled with the apple pieces and poured over the egg mixture.
We topped with some pastry stripes and 'leaves' and sprinkled with a bit more sugar. We popped it back into the oven for another half hour until the top was golden. 
Perfect served with yet more custard 😍
  • Apple and Custard Tart 🍏🍎🍏🍎🍏 Me and the littlest actually made this a week ago, I'm just hideously behind with the old postie mc posts at the moment. This was delicious though so I thought better late than never 🤣

    I've thrown the recipe down below but a few tips- peel and chop about 5 apples before you start and sprinkle with cinnamon, preheat the oven to 150°C and while the base is cooking make your strips and decorations with the remaining pastry so that you can pop them straight on top after filling the tart.

    For the sweet pastry we rubbed 150g butter into 300g plain flour and 50g icing sugar. We bound it into a dough using a few tablespoons of cold water.
    We rolled it out and pressed into a 9" pie dish and blind baked for about 15 minutes (ours could have used another 5 if I'm honest)
    While it was in we mixed 2 eggs with a tablespoon each of cornflour and sugar, 200ml milk, and teaspoon vanilla in a jug.
    We took out the blind baked case, filled with the apple pieces and poured over the egg mixture.
    We topped with some pastry stripes and 'leaves' and sprinkled with a bit more sugar. We popped it back into the oven for another half hour until the top was golden.
    Perfect served with yet more custard 😍
