Susun bahan-bahan di alumunium foil >> nasi, tuna yang sudah ditumis, mayonaise, lalu ditaburi rumput laut yang sudah disobek-sobek, dan keju parut.

Panggang selama 20 menit di suhu 170deg C. Kalau ga punya oven, dikukus sebentar juga bisa kok 😄

  • The newly renovated canteen 1 opened its doors today. Probably not the best idea to go down on its opening day but as your dedicated NTU food guide, it would be wrong for me not to.

The queue was really long, taking approximately 20 min before I could place my order and another 30 before I got my food. They print your order number on a receipt so make sure you sit facing the tv otherwise you might get neck cramps like I did. I tried their rosemary chicken baked rice after seeing multiple students ordering it. I must say for $8 it definitely puts itself in on the pricier scale but one bite and I was silenced. Firstly, the cheese crust was golden crispy and evenly coated the bed of buttered rice. The rosemary chicken was also tender and seasoned properly, complementing the dish as a whole. The quantity of food is also really substantial and justifies the cost.

Do come down to canteen 1 if you want an upgrade from your typical school food. They have mala (it was decent before renovation but not sure if it is the same owner) and a conveyor belt hotpot restaurant (what is this wizardry 🤯). Wah really felt like I stepped into a whole different world.

  • After seeing @helen_goh_bakes post about 'Loh Mai Gai' Chicken and Sticky Rice, I set to make a batch only to discover I have no glutinous rice. Sad day! So this momma has to improvise. The closest I had was a small.amount of arborio rice so I tray bake mine instead of steam cause I was recipe testing and ran out of time. 
I baked the rice with leftover bacon broth, mushroom water (ones leftover from soaking the shiitake mushrooms) a touch of light soy. I topped it with marinated chicken thighs, Chinese sausages and shiitake with a cartouche and bake at 190 for 50 mins! Boom! I forgot to make some vegetables to go with it though but hey ho I got homemade pineapple sorbet! Any 5 a day will do right?! -

Go for the rock salt, which enhanced the taste. #wagyubeefbolognese #bakedrice - a nice surprise that the rice used is chicken rice. Highly recommend! #cheesymayofries - will be perfect if the fries are more aromatic.  #wildmushroomsoup - it's too "creamy" for me. Emergency Chicken Rice Casserole (from scratch!)
.
CHICKEN:
500g/ 1lb chicken thighs or tenders (tenderloin), cut into 1.5 cm / 2/3” pieces
1/2 tsp dried thyme, 1 tsp garlic powder, 1/2 tsp pepper
1/2 tsp vegetable or chicken stock powder (granulated bouillon) (my fave is Vegeta), 1 tbsp olive oil
RICE:
2.5 cups chicken broth/stock low sodium, 2.5 cups milk , any fat %
1 1/2 cups long grain white rice* (or jasmine, basmati, short or medium grain)
1/4 cup flour, 1 tsp vegetable or chicken stock powder (granulated bouillon)
2 cloves garlic minced, 2 tbsp unsalted butter
2 broccoli heads (large!), cut into florets (~400g/14oz, 4 – 5 heaped cups)
2 cups (200g) shredded cheese
GARNISH: 2 green onions , finely sliced

1. Mix Chicken ingredients.
2. Heat broth and milk (separately in microwave or together in saucepan on stove) until hot but don’t bring to boil.
3. Spread rice in pan, sprinkle with flour, then stock powder and garlic. Pour in broth, mix to dissolve flour, then add milk. Spread rice out across base of pan.
4. Top with broccoli, then chicken then butter. Bake UNCOVERED at 190°C/375°F (180°C/350°F fan/convection) for 40 min.
5. CHECK RICE (before stirring) – should be just cooked. Then add half the cheese, stir well (get all the rice in corners and edges, might be a bit adhered).
6. Smooth top, sprinkle with cheese, return to oven for 5 – 10 min just to melt. Sprinkle with green onion and serve immediately! .

This amazing baked rice is called Tachin, it’s a Persian dish and it’s part of my 3 part Persian Menu week! Quite often you see it with chicken or lamb in the layers but here I’ve made a plain one to serve as a side.
.
The rice is bound with a mixture of yogurt (I use Farmers Union Greek Style Yogurt) and egg so it’s rich and moist, yet fluffy. It’s simple to make, and tasty enough to eat plain and it will steal the show on any table!!! ~ Nagi x ❤️

Crispy Saffron Baked Rice (Tachin)
.
Parboiled Rice:  2 cups basmati rice, 1 tbsp salt, 3 L / 3 qts water
Barberries: 1/2 cup dried barberries (or chopped sour cherries or cranberries) 2 tbsp / 30g unsalted butter, 1 1/2 tsp rose water (optional)
Saffron Rice: 1 tsp saffron threads, 2 tbsp warm water, 1 cup plain yogurt (I use Farmers Union Greek Style Yogurt), 1/2 cup veg or canola oil (or butter!), 3 egg yolks,3/4 tsp salt
.
1. Rice: Boil water, add salt and rice, bring back to boil cook 5 min, drain, leave 5 min.
2. Barberries: Melt butter, cook for 1 1/2 minutes until they plump up. Remove from heat, stir through rose water (if using).
3. Saffron: Ground saffron into powder (optional step). Add water and leave to seep for 10 minutes.
4. Assemble: Lightly grease a glass pie dish with oil. Mix yogurt, egg, oil, saffron water and salt in a large bowl. Add rice, stir well. Pour half in pie dish, smooth, top with 1/3 of the barberries. Cover with remaining rice, smooth, sprinkle over another 1/3 of the barberries. Press down firmly, cover with foil.
5. Bake 60 - 80 min at 180C/350F until underside is a deep golden crust. Rest 10 min. Remove foil. Flip upside down onto serving plate, scatter surface with remaining barberries. Slice / cut into it and serve! Lovely served with extra plain Greek style yogurt.

Rasanya pas masuk mulut kayak lumer2 gimana gitu.. Gurih lembut dan creamy 😍 Si J aza langsung habis 2 ramekin.. Ini memang enak atau anaknya lagi kelaparan ya.. hihihi.. Cocok buat menu anak maupun org dewasa.. Utk kulit salmonnya drpd mubazir saya buat crispy salmon skin (liat di IG story ya buat tutorialnya).. Yukz dicoba moms resepnya.. Recommended 👍🏻👍🏻👍🏻

🍚 Baked Rice Salmon Mentai 🍚
Bahan:
- 4 centong nasi putih
- 1 centong sushi vinegar
Bahan salmon:
- 300gr salmon tanpa kulit, potong kotak2 kecil
- 1 sdm sushi vinegar
- 1,5 sdm kecap asin
- 1 sdm minyak wijen
Bahan saus mentai (aduk jadi satu):
- 5 sdm Japanese mayonnaise/ Kewpie
- 1 sdm saus tomat
- 1 sdm saus sambal
- 1/4 sdt chilli powder (optional - klo suka pedas bisa ditambah lbh banyak)
Cara membuat:
1. Campur potongan salmon dengan bahan marinasi dan aduk rata. Diamkan selama 15 menit.
2. Campur dan aduk rata nasi hangat dengan sushi vinegar. Tuang ke dalam ramekin hingga 3/4 bagian ramekin.
3. Letakkan salmon keatas nasi di ramekin.
4. Beri saus mentai ke atas salmon. Ratakan hingga tertutup ke seluruh permukaan salmon.
5. Panggang dalam oven yg sdh dipanaskan sebelumnya dengan suhu 180’c selama 15 menit. Bisa ditambah 3 menit terakhir dengan api atas supaya permukaan atasnya kecoklatan. Angkat dan siap disajikan.

For those that would want to skip the baking part, here’s a little story. When you bake the rice, it allows for all the ingredients to familiarize with each other. It also adds a little crisp and smoky taste to it! So tell me, what’s the point of skipping it? 😊
