  • Новость бомба или мне нельзя глютен 😅🙈 В общем дела обстоят так, что уже месяц, как мне нельзя есть продукты из пшеничной и ржаной муки, кукурузу и продукцию из кукурузы, масло сливочное и всю молокопродукцию в том числе творог и кефир, и сыр😢, яйцо отварное и жаренное, рыбу, семечки и орехи, сахар. Вот такой парадокс и большая печаль для хлебопека, который любит свое дело 🙈 Конечно, разрабатывая новый продукт мне приходится его пробовать, пусть и совсем в небольших количествах, дабы не сильно расплачиваться потом внешними и внутренними проявлениями 😅 Что же осталось у меня? С учетом того, что я не ем мясо и птицу...Овощи — разнообразные, особенно хорошо будет летом 🌿 Фрукты все. Крупы все кроме пшеничной, кус-куса, булгура, птитим. Бобовые — мы очень любим чечевицу, фасоль красная и белая, горох нут и простой, маш. Вместо сладкого немного зефира и безе, сухофрукты — инжир и финики 🍒.   • 100% whole wheat, 80% hydration, inseead of water used yeast water from mixed fruit (no levain), 2% salt. 2h autholyse, 6h bulk at 28C, 12h proof in the fridge. For the yeast water: 100 g of cut fruits (in my case strawberries, apples and raisins), 200g water, 20g moscovade sugar, and 5g organig honey. Fermented 48h at 35C shaking and degassing twice a day. Wait till the Ph drops below 4.2 for SAFETY reasons.

Daqueles que você vai conseguir fazer ai no conforto de sua casa!

Ingredientes:
468g Farinha de Trigo
60g Açúcar 
15g Sal
282g Ovos
30g Fermento Biológico Fresco
225g Manteiga

Modo de Preparo: 
1- Ponha na batedeira a farinha e o açúcar. Misture.

2-Junte os ovos e bata em velocidade baixa, para unir a massa

3- Acrescente o sal, Bata lentamente, com a raquete, até incorporar
.
4- Após o Sal incorporar, acrescente o Fermento e deixe ele incorporar na massa igual ao Sal

5- Vá acrescentando a manteiga aos poucos, até a massa ficar homogênea e se soltar.

6- Ponha a massa em uma vasilha, cubra com filme plástico e deixe na geladeira por uma noite (12 horas)

7- Após às 12h, tire a massa da geladeira, deixe em temperatura ambiente por uma hora. Divida a massa em pedaços de 50g.
Boleie a massa: usando uma mão em movimentos circulares

8- Distribua os pães na forma especiais para brioche (se não tiver, use a uma ao seu gosto) previamente untadas com manteiga e farinha. Deixe fermentar até dobrar de tamanho (1 hora)
. 
9- Pincele a superfície com uma mistura de água e gema (dilua a gema com um pouco de água para que demore mais para dourar). Asse em forno preaquecido a 180ºC por aproximadamente 20 minutos, até dourar bem.

10- Espere esfriar completamente antes de desenformar

  • Throwback to just two small weeks ago. HOW THE...? It feels like another life already. I can’t really even comprehend the idea of getting up early and heading to the shop to produce this display for our lovely customers. I miss them. We miss them. MMB was/is just as much about the people as it was the bread. We know more customers than those we don’t, we know what’s going on in their lives, they always ask us about our latest drama (our new mixer has finally arrived btw, great timing) and they roll their eyes at my terrible taste in music just as much as Jeff does. And surely you’re not loved if you’re not teased?! That’s what I tell myself anyway. I guess at least when we return, and we WILL RETURN, there’ll be no major news to catch up on... “What have you been up to for the last six months? Nothing. No us neither. Although we did make a very good banana bread”. Give us a wave/emoji/GIF when you’re next virtually passing by tribe. Lots of love x

BRIOCHE BEM TE QUERO .
Algumas considerações . Todos os ingredientes tem que ser pesados
. Usei Farinha Italiana ( por ela ser bem forte, consigo uma maior extensibilidade e um ponto de véu perfeito)
. Caso use uma farinha normal, sugiro diminuir a quantidade de leite
.
. Ingredientes  Para 1 Brioche
.
. 300 gr de farinha ( usei Superiore @le5stagioni . 244 gr de leite integral . 48 gr de açúcar demerara pulverizado . 42 gr de ovo caipira
. 53 gr de manteiga sem sal
. 3 gr de sal
. 6 gr de fermento biológico . 1 colh de café de essência ou extrato de baunilha .
Mode de fazer:
.
1-Separe todos os ingredientes 
2-Aqueça o leite a 32° coloque metade do açúcar e o fermento, misture e deixe agir por 5 minutos 
3-Coloque no bowl da batedeira o ovo, açúcar a baunilha, o leite com o fermento, misture e coloque a farinha e depois o sal
Bata bem
4- Acrescente a manteiga e bata até o ponto de véu 
5- Deixe crescer por aproximadamente 50 minutos ou até dobrar 
6- divida em 6 bolinhas e coloque em forma alta de pão ( eu untei com desmoldante) pode ser manteiga 
7- deixe crescer novamente por aproximadamente 50 minutos 
8- passe ovo batido com açúcar granulado por cima e leve para assar em forno pré-aquecido a 180° por aproximadamente 30 minutos .

200g mayanınızın 160g (%80 nini) atın ve üzerine
80g un
80g su ekleyin
Ve bu işlemi 10 gün boyunca aynı şekilde tekrar edin... (eviniz ekşi ekşi kokacak 🙃)

10.günün sonunda mayanız kullanıma hazır hale gelecek. 
6 ayın sonunda da daha kuvvetli ve güzel bir mayanız olacak. .

Önemli olan mayanızın kaç yaşında olduğu değil, mayanızı ne sıklıkta besleyip güçlendirdiğinizdir.
