Prefiero comprar en tiendas de barrio y sin plástico pero en estas circunstancias es muuy difícil. Hoy he ido a una tienda un poco más lejos de lo normal y al pasar la policía me han mirado y... Uuuh qué escalofrío. Cambiar estos hábitos no me gusta nada. No sólo no tengo libertad para salir si no que tampoco la tengo para elegir el tipo de consumo que quiero hacer. 
Pero a la vez, en realidad, estoy viviendo de manera privilegiada.

We opted for the "Prawn Tings" which included crunchy fried prawns, peppered prawns, fried rice, plantain and coleslaw 🍤🦐
The portion size was perfect and the food was full of flavour; we really enjoyed it.
It's great to see small businesses like this still managing to operate considering the Covid-19 crisis.
If you can, we'd totally recommend ordering from here; it's well worth it! You can either DM them or find them on @deliveroo

Self care goes a long way for you and for the people that love you! My form of self care today was to pick some flowers and make up a new recipe while listening to some 1920s music. Soul= happy plus nourished.

Things are heating up in Texas, but this gloomy rainy weather always calls for a creamy golden soup!! I call this Forager’s Feast butternut squash soup! Ps, I found an old can of pumpkin in the back of my pantry I meant to use for cookies in the fall, so I tossed it in too!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Garnished with foraged finds at the farmer’s market for the micro greens, and my grandma’s backyard for the violets, hehe.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1.5 cups butternut squash or a frozen bag of it works 
1 can pumpkin 
1 can full fat coconut milk 
1.5 t. @Curcumakitchen @lunafixa golden paste 
2 T. nutritional yeast 
½ lemon 
A few cups vegetable broth - add more or less for desired thickness 
2 T curry powder
Pinch of salt, all spice, nutmeg, cayenne, cumin, and topped with rainbow peppercorns.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a pot bring squash and vegetable broth to a boil. Cook on medium for 15 minutes. Puree in blender. Pour back into the pot and add in everything else and simmer, adding spices to taste.

Ingredients:
2-3 apples
250g all purpose flour
100g oat flour
75g brown sugar
250g almond milk
50g sunflower oil
16g baking powder
peel-grated lemon
cinnamon
a pinch of salt

Method:
1)Preheat the oven to 180°C
2)Cut one apple in cubes
3)Mix together in a bowl all purpose flour, oat flour, baking powder, cinnamon and sugar
4)Add to the bowl, sunflower oil and little by little add the almond milk. Finally, add the greater peel of the lemon and stir well.
5)Grease a cake pan and pour the batter into it.
6)You can top your cake with some fine-sliced apple slice and a sprinkle of cinnamon and sugar.
7)Bake for 50 minutes to 180°C
8)Enjoy!

TIPS:

    This is 100% my favourite cake ever, I just love it so much, especially when is fluffy and light!
    This recipe is very easy and vegan! So, diary-free but it can be also made gluten free, use almond or oat flour, so stick around even if you are not vegan, because you will love this recipe!

  • Big batch of health, crispy oven baked falafels coming up!
There are so many ways to eat them, you could have them for both lunch and dinner and still feel like you’re eating something different each meal.

They’re good to store in the fridge for 5-6 days.... or put them in the freezer and you’ll have a healthy meal in just a few minutes.

Today I felt like having something fresh with a bit of spring vibes. So I made two different falafel bowls (no they were not both for me, but I could have eaten them both to be honest). In the first one I had green leafs, broccoli, grated carrots, diced radish, raspberries, blackberries and falafel. For the other one I used green leafs, diced cucumber, cherry tomatoes, zoodles, pomegranate and falafel. Also made a fresh yoghurt, mint and lime dressing.

Ingredients:
▫️500 gram organic dry chickpeas @garantskafferiet
▫️3-4 garlic cloves
▫️1 onion, roughly chopped
▫️2-3 dl fresh parsley, chopped
▫️1-1,5 dl fresh cilantro
▫️0,5-1 lemon juiced
▫️0,5-1 lemon zest
▫️2 tbsp chickpea flour
▫️2-3 tsp cumin
▫️1 tsp cardamom
▫️1 tsp cinnamon
▫️1-2 tsp salt
▫️0,5 tsp ground cayenne pepper
▫️2 tsp baking soda (optional)
▫️1 tsp water (optional)
▫️Sesame seeds, for coating (optional)

Method:
▫️Pour the chickpeas into a bowl and cover with water. Let them soak over night.
▫️Preheat the oven to 175 degrees Celsius
▫️Drain the chickpeas and add to your food processor
▫️Add the garlic cloves, chopped onion, parsley, cilantro (optional), cumin, cardamom, cinnamon, salt, cayenne pepper, chickpea flour, lemon juice and lemon zest.
▫️Mix everything together until you have a mixture that is well blended, but still not too smooth. You want there to be some texture left
▫️Taste the mixture and add more spices, herbs, salt or lemon juice if desired
▫️If you’re using baking soda to make them more fluffy - resolve the baking soda in water and then mix into the chickpea texture
▫️Form small balls or patties and cover in sesame seeds (optional).
▫️Place on a parchment covered baking sheet
▫️Bake in the oven for 20-25 minutes, flipping halfways, until golden brown

  • Frittata with strawberries and sausages for breakfast this morning! Who could go wrong with that? Used my leftover sautéed veggies and threw it in together to create this masterpiece. What do you like in your eggs? 🍳

Почему я раньше не делала выпечку с бананами? Это же радость и спасение: и кексы, и печенье, и хлеб получаются мягкими и очень вкусными. А еще можно(и нужно) использовать бананы, которые “испортились” и стали слишком мягкими. Этот хлеб может стоять холодильнике до 10 дней, но я конечно доела его за два 😁 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥛 Ингредиенты:
- 250 грамм сахара
- 120 грамм сливочного масла
- 2 яйца
- 3 средних мягких банана
- 125 мл buttermilk (пахта) - можно сделать самим, ниже опишу как
- 1 чл ванилина
- 330 грамм муки
- 1 чл разрыхлителя
- 1 чл соли
- 100 грамм грецких орехов ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
🧈 Как  готовить?
1. Как сделать пахту: в 125 мл молока (коровьего) влить 1.5 чайных ложки лимонного сока. Перемешать и дать постоять минут 15-20.
3. Смешать сахар и масло, постепенно вмешать яйца. Добавить пахту, бананы (их нарезать или размять сначала) и ванилин. Все это взбить до однородной массы

    Почему я раньше не делала выпечку с бананами? Это же радость и спасение: и кексы, и печенье, и хлеб получаются мягкими и очень вкусными. А еще можно(и нужно) использовать бананы, которые “испортились” и стали слишком мягкими. Этот хлеб может стоять холодильнике до 10 дней, но я конечно доела его за два 😁 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
    🥛 Ингредиенты:
    - 250 грамм сахара
    - 120 грамм сливочного масла
    - 2 яйца
    - 3 средних мягких банана
    - 125 мл buttermilk (пахта) - можно сделать самим, ниже опишу как
    - 1 чл ванилина
    - 330 грамм муки
    - 1 чл разрыхлителя
    - 1 чл соли
    - 100 грамм грецких орехов ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
    🧈 Как готовить?
    1. Как сделать пахту: в 125 мл молока (коровьего) влить 1.5 чайных ложки лимонного сока. Перемешать и дать постоять минут 15-20.
    3. Смешать сахар и масло, постепенно вмешать яйца. Добавить пахту, бананы (их нарезать или размять сначала) и ванилин. Все это взбить до однородной массы

Пусть откроет новую неделю и зарядит ее на бодрость этот красавчик, полный витаминов 🍊🍋 ⠀ ⠀

На один большой или 2 маленьких стакана нам понадобится:
✔️2 апельсина
✔️1/2 лимона
✔️0,5-1см корня имбиря (насколько любите)
✔️Минеральная вода с газом
✔️Мёд или натуральный сироп по желанию (если нравится послаще) ⠀

Выжимаем сок из апельсинов, половины лимона. Натираем корень имбиря на мелкой тёрке. Все спешиваем в стакане и добавляем минералку. Далее при желании можно добавить мёд или сироп для сладости, а так же лёд в тёплое время года! ⠀

Вуаля 🎉 Заряжаемся витаминами 🍊🍋 и позитивным настроением!

Youtube search how to get the seeds out (or see my story/highlights) and store them in a jar in the fridge.  Note, once you have extracted the seeds these only last a few days, not weeks. Sprinkle on breakfasts, salads etc.

  • Have you heard? @food52 has invited the masses to share #pantrypasta this week via the tag #f52community— naturally, I obliged. This is their pici con le briciole, or pici with breadcrumbs, but make it spaghetti! I subbed a few things based on what’s around. If we’re being honest, that’s what cooking (and pantry pasta) is all about. Use any long noodle. In place of anchovy, wild sardines. No fresh herbs on hand so I added a pinch dried oregano and a good bit of grated parmigiano. It all comes together with pasta water (maybe my fav “pantry” ingredient?) dried chili and sourdough breadcrumbs. It’s spicy, saucy and packed with flavor and protein thanks to teeny tiny tinned fish. Ty, pantry.⠀

I park myself on a porch chair, close my eyes and begin people watching with my ears. There are two children playing at the picnic table below me (refreshing!) To my delight, they are... pretend cooking!⠀

“It’s OK to eat grass and flowers... I think.”⠀
“Time for the onions. They’re spicy but not too spicy...right?”⠀

Listening to this brought a lot of joy to my heart. It’s Monday— a new week, a new day and a new opportunity to rejoice and be glad in it.⠀

Mussels, crusty bread and bright colors for @surlatable have me dreaming about summer. Plus, these high temps in southwest VA are helping some. Are you spending more time outside? Have a picnic— you won’t regret it.⠀
