  • I made an almond & lentil burger! 
With mango chutney & arugula!
I had intentions of having a vegan meal. 
Then I had a strong urge to add a fried egg. 
Once I took it there, I had to add cheese! 
Maybe next time I’ll make a real vegan burger.

  • I was extremely fortunate to attend my cousin’s wedding in Miami, who were able to accommodate my vegan needs and made me a delicious zucchini pasta... which compensated for the cake and Cuban food I had all weekend 🙈🙈 (sorry to my true vegan friends). I couldn’t be any happier for my cousin and his lovely bride! ❤️❤️❤️
Heading back to CA and detoxing my body! ✈️

  • October is always termed the month of feasting due both my hubby and I shared the same birthday month🎂🎉so to help my digestive system function better, here’s my high fiber brekkie to kick start the day and an effort to make way for my very big Spanish dinner tonight!! 😅😅 On the plate, are 2 portions of mixed green salad, 2 hard boiled eggs, lightly drizzled with lemon infused olive oil and a tablespoon of Japanese garlic and pickle dressing that I bought from GIfu on my recent trip to Japan. Next is a portion of unsweetened Greek yogurt, topped with dried blueberries, wolf berries and a dash of psyllium husk powder. 😋😋 #breakfast #i❤️breakfast #eatwell #livewell #highfiber #gogreen💚 #almostveganmeal #homemade #jessicacookinglog

  • [Student meal] with only 4 basic ingredients!! 😉
Of course... this is not only meant for students since this is all very affordable and tasty but if some of you are currently struggling or tired of eating pasta everyday.. here’s a great alternative! ⬇️ 1) Carbs: Polenta 
2) Veggies: mushrooms and onions + optional herbs 
3) protein: 1 egg in the middle 
AND THAT’S IT! (Let’s say that salt, pepper and spices don’t count) 
First of all, prepare the onions and the mushrooms with a bit vegetable oil then set it aside and cook the polenta in a bit of milk and water with salt and finally make a sunny side up egg and combine all the ingredients together to make this beautiful and extremely filling plate! And don’t forget the herbs (basil, cilantro...) or even better add some spinach to it! 💚

Have a good evening guys! 🌸 [Repas étudiant] avec seulement 4 ingrédients! 👇🏼 Bien sûr ce repas n’est pas destiné que aux étudiants étant donné qu’il est très simple à réaliser et pas cher du tout! 
Glucides: Polenta 
Légumes: Champignons et oignons
Protéines: 1 œuf (Disons que les herbes, le sel et le poivre ne comptent pas) 🤫

Faites cuire les oignons et les champignons dans une poêle avec un peu d’huile d’olive, à côté commencez à faire cuire la polenta dans du lait et de l’eau salée et finissez avec un bel œuf au plat pour le dessus! (Sans oublier les herbes: basilic, persil etc..) ou même des épinards! ☘️ Sur ce, passez une belle soirée! 🌾 •

  • Hands down the BEST oatmeal bowl I’ve ever made!!❤️❤️❤️ and let’s be honest here the best thing about it was Trader Joe’s caramel apple yogurt🤤 IT IS TO DIE FOR. So thick and creamy and smooth you can bet I’ll be snacking on this all day😂 I usually try and avoid yogurt because of the high sugar content but hey I’m on vacation and it won’t kill me lol. Now imma head out the door and go for a walk! Hope everyone is having a great morning!!🥰 .

  • We are doing our best to move toward a more plant focused diet. Not vegan, not even vegetarian, just hoping to start focusing on plants as the base of a meal and any non-plant items as the side.

Or at least making a few meat free meals a week.

Anything to improve our healthy AND the environmental impacts of the foods we choose.

The thing is, we are still learning! We have very little experience eating this way! Thankfully we have supportive friends who do eat vegan or plant based often or always who are always happy to share their knowledge!

And I’m also so grateful for @epicureofficial for providing a ton of meal solution, ideas, recipes, and resources as well. This veggie burger was divine, both delicious and satisfying.

Okay so yesterday my mom sent me a recipe from @kremno_elin 🍪 And it was these delicious cookies. Unfortunately they are not vegan, but anyway I decided to make these because we had an overripe banana laying around 🍌

Ingredients: (makes about 12 cookies)
A banana
An egg
130 grams of almond flour (or just blend 130 grams of almonds in your blender as I did)
25-30 grams chocolate (I used chocolate chips)
1/2 teaspoon baking powder 
1 teaspoon baking soda
1/4 teaspoon salt
.
How:
Mash the banana and mix in the egg. Combine all the dry ingredients in a bowl and mix. Then add the wet ingredients to the dry ingredients and mix well. .
Now take a tablespoon and make small cookies on a lined baking tray. Then bake the cookies in the oven for 8-10 minutes. The oven is set on warm air and 175 degrees Celsius.

Hope you enjoy these cookies as much as my mom did. She actually almost cried when I surprised her with these cookies when she came home from the gym💛

  • Southwestern inspired Salad Bowl. Green and red leaf lettuce with cabbage as the salad mix. Black beans, steamed corn, fresh cucumbers, garbanzo beans, cherry tomato, one boiled egg doesn’t really go with the theme I just wanted it. Avocado cilantro lime dressing made with one avocado, one cup of unsweetened almond milk, half a cup of cilantro, one clove of garlic, salt and black pepper to taste and the juice of half of a lime blended well. Served with a side of garlic sweet potato fries. #pacificnorthwest #saladbowl #southwesternstyle #eatyourveggiespeople #almostveganmeal

  • I get asked often about my diet, if I’m vegan or vegetarian. My answer: At least 80% of what I eat is vegan. 
Here is my 80% vegan brunch.  Literally, it would be 75%. 🤣

From the bottom up:
-Organic brown rice
-Veggie burgers
-Organic cage-free brown eggs
-Organic avocado 😋
