  • Let's start off with the king of mushrooms: Chaga.
Chaga mushrooms grow off of birch trees, but can also be found growing on beech, alder, chestnut or hornbeam trees, in areas which you can find in places such as Siberia, Northern Canada, Alaska, and even Northern areas of the US. 
It's a large mushroom, and in fact, quite hard if one were to touch it, which is why it is essential for one to either use a hot water or alcoholic form of extraction in order to reap the benefits of the mushroom.
Chaga is considered one of, if not the highest antioxidant food in the world. It has been traditionally used in Europe, Russia in particular, to treat diabetes, gastrointestinal cancer, heart issues and more.
It has been studied to inhibit cancer growth and stimulate the immune system by increasing the production of interleukin 6 which are T lymphocytes that help protect our body from any virus or bacteria.  In addition, it contains glyconutrients, a plant saccharide that supports our immune system that enables our bodies to form glycoforms, the outside structures of our cells that communicate with one another. With these glycoforms in place and functioning well, they send signals for the body to function properly by keeping our natural defense mechanisms up, and other systems working.This, in short, makes chaga an anti inflammatory, anti viral and anti bacterial resource for when we are sick. Conversely, chaga is actually safe enough to take all year long, unlike conventional or other plant remedies that may be over powering to our system. The reason for this is that we supposedly have very similar DNA to fungi, particularly when we compare ourselves to plants. we, in fact, have much more similarities to the mushroom kingdom.
This mushroom i a rich source of over 200 phytonutrients, flavanoids, contains an array of b vitamins, particularly riboflavin and niacin, vitamin D, copper, calcium, potassium, manganese, zinc, iron, potassium and more. Furthermore, it also supposedly relieves stress on the adrenal glands and digestive organs with the help of its adaptogenic compounds, and its source of pantothenic acid.

If you’re in the mood for a 𝘀𝘄𝗲𝗲𝘁 𝗯𝗿𝗲𝗮𝗸𝗳𝗮𝘀𝘁, this one is for you 
1 cup of grated sweet potato
1 grated apple
2 tablespoon of almond butter (I used cashew butter) 
A pinch of sea salt 
Cinnamon 
Almond milk (I used unsweetened cashew milk) 
Topped with toasted cashews, sunflower seeds, pumpkin seeds, walnuts and sesame seeds.  And sliced banana 🤤🍌
