  • Diventare vegetariani è un passo importantissimo per una persona, è indice di una consapevolezza che si fa strada, per qualcuno è l’unico modo per iniziare il cambiamento.
Non tutti sono in grado di fare a piè pari il salto al Veganismo, noi stessi siamo stati vegetariani. 
Purtroppo per quanto riguarda lo sfruttamento, la sofferenza e l’uccisione degli animali non cambia nulla.

È importante sapere che quando consumiamo uova stiamo pagando affinchè milioni di galline vengano sfruttate fino allo stremo, fino al momento in cui verranno macellate. 
Consumando uova inoltre paghiamo affinchè milioni di pulcini maschi vengano triturati vivi a poche ore dalla nascita. 
Nella produzione del latte avviene la medesima cosa, le mucche vengono “spremute” fino a causare infezioni dolorosissime come le mastiti, fino al punto in cui le loro ossa non reggeranno il proprio peso e quindi diverranno “improduttive” e macellate anch’esse.
La fine che spetta ai vitelli è la medesima, il latte serve a noi, loro sono il di più, uno scarto.
Verranno allontanati e uccisi a poche ore o pochi giorni dalla nascita.
Sono solo dei cuccioli.

One large lipped metal plate with 14 small round containers each containing everything from sambar (vegetable and lentil soup) and keerai kootu (spinach and coconut stew); to fresh curd and kesari (semolina pudding) 🤩. An appalam(lentil cracker) and chapati in the middle with a server coming around to scoop out hot rice as you need it. Oh and a pot of ice cream at the end to boot! .
All of this clocks in at only 140 rupees (less than $3 CAD) and the kicker is that you can get free refills for any of the items on your plate! The Indian version of all you can eat 😂

Not only absolutely delicious but also jam packed with antioxidants, fiber, vitamin A, manganese, vitamin C, copper, potassium, vitamin B6, vitamin E and vitamin K. 💪

I used some of these beauties to make a raw pumpkin pie. Slide for second photo. The recipe comes from @fullyrawkristina .

I wasn’t able to locate any pie pumpkins so I used canned pumpkin. I used 1 teasoon vanilla extract instead of vanilla bean. .

For the crust;
.

1 to 1 1/2 cups of pecans 
1 pound fresh pitted dates.
.

Add ingredients to your food processor. Pulse until the mixture reaches a crust-like consistency then press into a pie pan.

For the filling;
.

one peeled pie pumpkin ( 2-3 cups ) .

1 1/2 to 2 pounds fresh pitted dates - the more you add the sweeter the pie will be.

1 ripe persimmon
cinnamon
ginger
vanilla bean .

Add all the ingredients to your food processor, pulse until creamy. Pour filling into crust, spread evenly. Freeze 2-3 hours or until the pie is firm. Serve chilled. Yum. ❤️

1/2 yellow onion, thinly sliced ⠀
3 cloves garlic⠀
8 ounces broccolini, chopped ⠀
1 bell pepper, thinly sliced⠀
1 lb fresh rice noodles (found in asian market) OR 1 lb dry rice noodles⠀
5 tbsp soy sauce ⠀
1 1/2 tbsp sriracha⠀
1-2 tsp chili pepper flakes (depending of preference of heat!)⠀
8 ounces broccolini ⠀
2 tsp avocado oil (or oil of choice)⠀
⠀
Method: ⠀
1.If you’re not using fresh noodles and instead using dry rice noodles prepare the noodles according to packet instructions.⠀
2. Meanwhile mince the garlic and thinly slice the onion. Bring a wok or large pan on medium heat. Add the oil then add the garlic and onion and sauté for 4 minutes then add thinly sliced bell pepper and chopped broccolini. Sauté for 5-7 minutes. Add the chili pepper flakes and stir.⠀
3. Add the noodles to the vegetables and mix…the noodles should soften after 2-3 minutes. ⠀
4. To a small bowl combine soy sauce and sriracha. Mix together then pour over the noodles. Fold gently to combine, for the sauce to coat the noodles evenly and to caramelize. Letting cook for 4-5 minutes.⠀
5. Turn off heat and serve immediately.⠀

6 medium russet potatoes
2 carrots
2 stalks celery
1/2 frozen cup corn
1 red onion
1 1/2 cups of cooked brown lentil
2 cups chopped mushrooms
1 teaspoon fresh thyme
2 cloves minced garlic
2 cups vegetable broth
2 tbsp of soy sauce
salt, to taste
pepper, to taste
3 tbsp of avocado oil or any other vegetable oil for sautéing
1/2 cup unsweetened soy or cashew milk, or more depending how you like your mashed potatoes
4 tbsp of vegan butter

Method:
Peel, chop, and boil the potatoes for 10-15 minutes until soft. Meanwhile, chop the carrots, celery, and onion, sauté in oil for a until veggies are soft. About 5 min.
Add the mushrooms, and cook until the edges begin to darken. Add the cooked lentil, corn, garlic, thyme, and season with salt and pepper. Add the soy sauce then slowly add the veggie broth stirring continuously. Let simmer for about 8-10 minutes to thicken.
Mash the potatoes and add the soy milk and vegan butter. Add more if needed until smooth. Season with salt and pepper to taste. Lay the veggie filling into a baking dish or a pie dish then spread the mashed potatoes over top. At this time you can get creative with designs and patterns for the top. The rougher the surface, the crispier it will turn out.Spray the surface with cooking oil. Bake the shepherd’s pie for 15 min at 385 F oven then broil the top for for 5 min or until the top is crispy. Enjoy!
