Ich korrigiere: es gab Reis. Gestern. Und ich nenne dieses Gericht Paella, auch wenn ich unter genau diesem Gericht als Post mal eine wütende Nachricht einer waschechten Spanierin erhielt, dass ich sowas auf gar keinen Fall (!!!!) Paella nennen darf. 😤 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Naja, ich nenn es trotzdem so. 🤷🏼‍♀️ Rebell wie ich übrigens bin, habe ich heute eine Butterdose gekauft. Und ich hab MARGARINE reingemacht! So! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Heute war Küchen-Action angesagt. Granola gemacht, Äpfel werden gerade noch gedörrt. Mac'n'Cheese gemacht (ich warte noch auf einen wütenden Amerikaner, der mir unter diesem Post erklärt, dass ich das gar nicht so nennen darf!!). ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Und in den nächsten Tagen wird hier Mal gründlich aussortiert. Kleidung und Küche. Wär wirklich wichtig.

Ingredients:🌱.

• 2 T. olive oil.
• 1/2 onion, chopped.
• 3 garlic cloves, minced. • 1 14 oz can artichoke hearts, rinsed and drained.
• 1/2 yellow squash, sliced into ½ thick rings and then quartered • 8-10 button mushrooms, washed and quartered • 1/2 red pepper, roughly chopped • 1 tbsp paella seasoning from Spice Jungle (or see my substitution suggestions on the blog) • Pinch of saffron threads, crushed • 1 14 oz can diced tomatoes • 1 quart low-sodium vegetable broth • 1 ½ cups Bomba rice • 1/2 c. frozen peas, thawed and drained • 1 tbsp lemon juice • Fresh parsley, chopped • Fresh ground pepper🌱 . . 
Directions:🌱 . . ➡️ Pre-heat your oven to 450 degrees.🌱 . . ➡️ Heat the olive oil in a large oven-proof skillet (like this 13" cast iron paella pan from my friends @victoriacookware), sauté the onion until it becomes soft and translucent. Add the garlic and sauté for 1-2 minutes more.🌱 . . ➡️ Add artichoke hearts, red pepper, yellow squash and mushroom. Continue to cook for 2-3 more minutes.🌱 . . ➡️ Add the Spice Jungle paella seasoning and saffron threads. Stir all ingredients and cook for 1-2 minutes until fragrant.🌱 . . ➡️ Add the rice and stir to coat. Allow the rice to toast for ~1 minute.🌱 . . ➡️ Add diced tomatoes, rice and vegetable broth.   • Paella con Tofu e plantain al forno 👌🥘 Faccio una sorta di paella molto spesso col riso da risotto e qualsiasi verdura ci sia in frigo o freezer. Questa volta ci ho aggiunto anche del Tofu per un poco più di sostanza.

Avete mai cucinato col tofu?

Bisogna pressarlo, ci sono le presse apposta o come me si può mettere della carta cucina e sciacciarlo tra due piatti con qualche peso sopra ad esempio una bella pentola. Poi lo si può far marinare, ad esempio per questa paella l'ho coperto di paprika, aglio in polvere e un pochino di olio e limone. La marinatura gli darà sapore.
Poi a me piace cuocerlo in padella, siccome la mia marinata aveva già un pochino di olio ho aggiunto al fondo della padella pochissimo olio giusto per non fare attaccare, poi cotto i pezzetti di tofu finché non si sono dorati i bordi un pochettino. 😋

A paella é um prato típico da gastronomia valenciana 🇪🇸 que acaba sendo pouco explorado no universo do veganismo.   • In 2016 ging ik samen met Jessica een weekje weg naar Murcia in Spanje.

Maas was nog niet geboren dus we waren met z'n tweetjes.

Wel aten we al veganistisch dus met gezonde tegenzin zaten we ons al mentaal voor te bereiden hoe we al dat lekkere, niet vegan Spaanse eten moesten gaan weerstaan.

In Spanje aangekomen werden we letterlijk over-the-top verrast hoeveel veganistisch aanbod er was. Veel meer dan er toentertijd in Nederland te vinden was.

Een van die recepten die ons is bijgebleven is deze vegan paella

  • In 2016 ging ik samen met Jessica een weekje weg naar Murcia in Spanje.

    Maas was nog niet geboren dus we waren met z'n tweetjes.

    Wel aten we al veganistisch dus met gezonde tegenzin zaten we ons al mentaal voor te bereiden hoe we al dat lekkere, niet vegan Spaanse eten moesten gaan weerstaan.

    In Spanje aangekomen werden we letterlijk over-the-top verrast hoeveel veganistisch aanbod er was. Veel meer dan er toentertijd in Nederland te vinden was.

You scream, I scream we all scream for Paella night! Yes indeed, with onions, saffron,  vegetable stock, green beans, black olives, red bell pepper, mushrooms, some appallingly arranged lemon slices (I did try but the Sailor Jerry rum was taking effect by this point) and special mention to the @likemeat_int smoked sausage which went on top with some parsley. I just threw the sliced sausage around a pan for a bit with some paprika and garlic and wham bam strawberry jam! Take a bow, @likemeat_int , the real MVP.
For dessert, or pud as we say, it was banana, cocoa and peanut butter whizzed together then frozen....ice cream.

  • ⭐️COMIDA DE SÁBADO ⭐️
Hoy nos podemos tomar nuestro tiempo cocinando asique nos lo hemos apañado bien 😁 una paella con @foodsfortomorrow y calabacín con miel de caña. Para el caldo de la paella hemos usado:
200 g de repollo
150 g de tomate 
100 g de nabo
100 g puerro
100 g de cebolla 
100 g de apio
100 g de zanahoria 
2 ñoras.
1 alga nori 
Sal al gusto.
Todo ello cocido durante 40 minutos y luego triturado y colado.
Luego la paella ha sido sencilla sofreír 1/2 pimiento rojo y 1/2 verde, 1/2 cebolla muy bien picaditos, 180 g de heura, un ajo bien picado y le añadimos 6 puñados de arroz cuando las verduras se hayan cocinado.
Le añadimos el caldo y Chuf chuf durante 10 min, luego 10 min en el horno y lo dejamos reposar otros 10 min con un trapo por encima fuera.

I’ve been working on this dish for a LONG time! Paella, especially vegetable paella, ought to be an easy win, right? As it turns out, IT IS – BUT, there are some finer points that need to be considered to honor authentic paella. For example, using the right rice, the right pan and the right spices. This recipe is the culmination of a lot of trial and error!🌱

The recipe is below, but if you want to be the beneficiary of my paella experimentation (and some rice and spice substitution options), head to the blog for some of my tips and tricks!🌱

Ingredients:🌱
.
.
•	2 T. olive oil
•	1/2 onion, chopped
•	3 garlic cloves, minced
•	1 14 oz can artichoke hearts, rinsed and drained
•	1/2 yellow squash, sliced into ½ thick rings and then quartered
•	8-10 button mushrooms, washed and quartered
•	1/2 red pepper, roughly chopped
•	1 tbsp paella seasoning from Spice Jungle (or see my substitution suggestions on the blog)
•	Pinch of saffron threads, crushed •	1 14 oz can diced tomatoes
•	1 quart low-sodium vegetable broth •	1 ½ cups Bomba rice •	1/2 c. frozen peas, thawed and drained
•	1 tbsp lemon juice
•	Fresh parsley, chopped •	Fresh ground pepper🌱

Directions:🌱 .

➡️ Pre-heat your oven to 450 degrees.🌱
.

➡️ Heat the olive oil in a large oven-proof skillet (like this 13" cast iron paella pan from my friends @victoriacookware), sauté the onion until it becomes soft and translucent. Add the garlic and sauté for 1-2 minutes more.🌱
.
.
➡️ Add artichoke hearts, red pepper, yellow squash and mushroom.  Continue to cook for 2-3 more minutes.🌱
.
.
➡️ Add the Spice Jungle paella seasoning and saffron threads.  Stir all ingredients and cook for 1-2 minutes until fragrant.🌱 .
.
➡️ Add the rice and stir to coat. Allow the rice to toast for ~1 minute.🌱
.
.
➡️ Add diced tomatoes, rice and vegetable broth.  Bring to a simmer for 5-7 minutes.🌱
.

➡️ Place the skillet into the oven and bake for 20 minutes, until rice is cooked through. 🌱 .

➡️ Stir in the frozen peas, allowing them to become bright green and warm.🌱 .

➡️ Add the lemon juice.🌱

  • First meal in Tenerife, Spain.  Gluten free and vegan paella.  Delicious!!! Slide over to see the pretty fruit dessert which included an exotic fruit.  I forget the name of it, but I didn't really like it anyway.  This is my second Canary Island to visit.  I hope someday to be able to see them all.  #veganpaella #eatmoreveggies #tenerifefood

600ml vegetable stock
6 vegan chorizo style sausages
1 onion
4 garlic cloves
1 yellow pepper (or red/orange)

2 tsp smoked paprika

1 cup frozen peas
1 lemon
Handful of fresh parsley
Instructions
In a large pyrrex jug/bowl place hot vegetable stock and saffron, leave to infuse.
Heat a tbsp of oil in a paella/large frying pan on medium heat. Cut the chroizo sausages into small chunks and fry for about 5 minutes until starting to brown on all sides.
Transfer the chorizo pieces a bowl and save for later.
Pour a little more oil into the pan and add the finely chopped onion.Fry for a few minutes and then add the crushed garlic and chopped pepper.
After a few minutes add chopped cherry tomatoes, tomato puree and smoked paprika, Stir and leave to cook for a couple of minutes.
Next add the bomba paella rice. Stir and once the rice is translucent on the edges add the saffron infused stock.
Let gently simmer for 10 minutes without stirring it. Stir once and leave for a further 10 minutes.
Add the frozen peas and chorizo sausage and stir.
Taste and check the rice is cooked, it should still have a bit of bite but be soft on the outside. Season with salt and pepper.
Squeeze juice from half the lemon and use the other half to decorate.
Add chopped parsley and serve! Best eaten fresh but will keep in the fridge in an air tight container for 2-3 days. #bestofvegan (as posted on cupfulofkale.com)

  • Hoje cheguei em Barcelona! 💚 Cidade linda, cheia de arte pra todo canto e com muitas opções veganas! 🌱✌🏾 É claro que eu não podia deixar de provar uma paella e os famosos “tapas” aqui na Espanha. Jantei no @bar_celoneta e provei vários pratos típicos na versão vegana! Paella (€16,80), gambas veganas (€11,25) que são esses “camarões”, croquetas (€7,95), calamares veganos (€7,95) que são as “lulas”, e sangría! Tudo muito gostoso! 🤤 Eu nunca comi camarão, mas minha namorada disse que a textura dessa versão vegana tá igualzinha e o sabor lembra bem!  A #lulalivre de crueldade eu achei igualzinha a normal! 1/2 tsp saffron
600ml (20oz) vegetable stock
6 vegan chorizo style sausages
1 onion
4 garlic cloves, minced
1 yellow pepper (or red/orange)
6 cherry tomatoes
1 tbsp tomato puree
2 tsp smoked paprika
200g bomba paella rice
1 cup frozen peas
1 lemon
Handful of fresh parsley
Instructions
In a large pyrrex jug/bowl place hot vegetable stock and saffron, leave to infuse.
Heat a tbsp of oil in a paella/large frying pan on medium heat. Cut the chroizo sausages into small chunks and fry for about 5 minutes until starting to brown on all sides.
Transfer the chorizo pieces a bowl and save for later.
Pour a little more oil into the pan and add the finely chopped onion.Fry for a few minutes and then add the crushed garlic and chopped pepper.
After a few minutes add chopped cherry tomatoes, tomato puree and smoked paprika, Stir and leave to cook for a couple of minutes.
