  • Week Three Whole Food January SOUP: Vegetable White Bean Soup

Ingredients: 
1 T olive oil
1 yellow onion--diced
2 cloves of garlic--minced
2 carrots--diced
1 zucchini--diced
2 heads of broccoli--chopped
½ head cauliflower--chopped
½ head green cabbage
1 can diced tomatoes
6 cups vegetable broth
1 T oregano
2 cans cannelini beans
Salt
Pepper

Directions: 
Heat oil in a large dutch oven. Saute the onions, garlic, and carrots, salt and pepper each step. After about 3 minutes, add the zucchini (salt and pepper and mix all together). Then add the broccoli and cauliflower (salt and pepper and mix all together). Then the cabbage (salt and pepper and mix all together). Then the canned tomato and oregano. If the mixture seems dry and you can see some scorching on the pan, add some broth to help the process. Some liquid should be in the pot as the vegetables somewhat cook down together. Then add the rinsed, canned beans. Stir together and then add the broth. Bring to a boil, cover, and simmer on low for 20 minutes if you want some crunch, 40 minutes if you want it all to be soft. Taste for salt and pepper needs. 
I tried a puréed version and it was very silky and I’ll probably sneak it into tomato sauce for my kids.

  • Super saucy caponata for dinner 🍽 Eggplant 🍆 , green capsicum, onions 🧅, garlic 🧄, tomatoes 🍅 and green olives mixed in with sugar, spice & everything nice 😉 With fresh sourdough 🥖 lathered in @nuttelexspread buttery 🤤 Such a nice summer dish, especially for picnics 🌞 Just use a slotted spoon when serving to avoid any sauce spillage on your blanket 😂🧺

Kung Pao cauliflower⁣ by @woon.heng 🔥 Perfect over some steamed rice for a delicious meal! Recipe below: ⁣Ingredients:⁣
1 small head cauliflower, wash & cut into florets⁣
1 small green bell pepper, cubed⁣
1/2 small red onion, cubed & 2 cloves garlic - sliced⁣
1/4 cup dry roasted cashews⁣
4 dried Thai chilis/red chilis⁣
oil for frying and cooking⁣
⁣
Batter ingredients: Mix 3/4 cup all-purpose flour, 1/4 teaspoon salt, a few shakes of white pepper in a bowl with 1 cup of cold water until well combined. The batter should be on the thicker side.
Dip cauliflower florets in batter, shake off excess & fry until golden brown. (I used a small saucepan) Drain excess oil on a paper towel. (Bake version: grease a baking sheet pan with oil, place battered cauliflower florets on the pan. Bake at 485F until light golden brown for about 20-25 mins, be sure to flip halfway & brush a florets with oil, if needed. For the last few minutes, you may broil to get a crispier texture) ⁣Sauce ingredients: Mix together 1/2 tablespoon dark soy sauce, 1/2 tablespoon sugar, 2 tablespoons soy sauce & 1 tablespoon Chinese cooking wine/sherry in a bowl & set aside.⁣
⁣
In a heated nonstick pan with 1 teaspoon oil, sauté onion, garlic, bell pepper, dried chilis until fragrant. Add sauce and cook mixture for 10-15 seconds. Then, add cauliflower florets, cashews, and coat cauliflower well with the sauce. .

Vegan Cream Cheese & Scallion Wontons 
by @comfortfoodvegan 🧡 
Who’d you share some with! Recipe below:

Recipe: 8 oz container vegan chive and onion cream cheese
1/4 cup scallions, sliced thinly
1/2 tsp garlic powder
Package of vegan wonton wrappers
Sweet and Sour Sauce for dipping

1) Scoop the cream cheese out of the container and into a bowl. Allow it to come to room temp a bit and mix in the garlic powder. Grab a small bowl and fill with water. you will use this water to seal the edges of the wonton wrappers.
2) Lay out 6 wonton wrappers at a time and cover the rest with a towel so they don't dry out. Take approx 1.5 tsp of the cream cheese filling and put it right in the center of each wrapper. Dip your finger in the water and trace the outermost edge of each wrapper, getting it wet. Then seal the edge by taking the two opposite sides together. then take the longest straight edge and overlapped the corners, getting more water on those edges to seal. Continue until you've used up all your cheese filling.
3) Heat up your choice of oil and once hot, depending on your pan size drop as many as your pan will allow. Each wonton takes 45-60 seconds. When fried, place on a towel so it soak up excess oil.
4) Keep them covered in the fridge and they'll last (minus a little crunch) for about 4 days. .

  • Happy freaking weekend baby!! Oh boy, that was literally the longest week of my life and I’m so glad it’s over. Multiple days I was running around campus nonstop from 8am-5pm, but it’s all worth it because this weekend is going to be amazing. Today I’m doing some exciting things around Athens (as you’ll see on my insta stories 😜😉) do I’m super excited. Stay tunes for my fun plans today, tomorrow, and Monday!
