It might be hard to believe, but there are sooo many delicious veggie sushi options out there these days. Most of these veggie options are much safer and healthier than consuming raw fish that you have no idea where it came. ๐ŸŸ โ €โ €โ €โ €โ €โ €โ €โ €โ €
This Rice Noodle & Crispy Tempeh Bowl and the Easiest Cucumber Sushi dish are two of my favorite sushi alternatives. โ €โ €โ €โ €โ €โ €โ €โ €โ €
For the cucumber sushi, simply remove the core/seeds of an English cucumber and stuff with carrot, cabbage, bell pepper or avocado. Then slice it up! ๐Ÿฅ’ โ €โ €โ €โ €โ €โ €โ €โ €โ €

  • Weโ€™ve been a little MIA for a bit... Things have been a little busy lately.  We traveled to MN to celebrate our little dudeโ€™s first birthday with family and friends and now weโ€™re back home and preparing for Halloween festivities.
Luca has been getting a little pickier with his eating so Iโ€™m finding that I have to be creative with what we serve him.  In particular, he is not a fan of most beans so I decided to make a white bean pasta sauce (recipe from @sweetsimplevegan) and he was all over it.  To be honest, we were too!  This definitely wonโ€™t be the last time we make this! Yum!

  • Because of so many requests! My parents (yes, they always cook together ๐Ÿฅฐ) SIGNATURE PUMPKIN RICE recipe. Itโ€™s very healthy - gluten-free, sugar-free and  and one my favorites. (Donโ€™t forget to click โ€œsaveโ€):
1) Take 3 cups of pumpkin, cut into medium cubes and place in a pot - pour boiling water over it, covering the pumpkin (about 1 inch above it) and bring it to boil. 2) Once boiling, add 1 cup of rice and cook for 15 mins, then add half of a cup of raisins (we use organic Thompson raisins from Trader Joeโ€™s), add a pinch of salt, cook for another 5 mins. 3) Turn off and add your favorite oil or ghee and let sit for 10 mins. ENJOY and tag me in your posts if you make it! Itโ€™s super easy, super delicious and INCREDIBLY healthy and also who doesnโ€™t like everything pumpkin in the fall? ๐ŸŽƒ #ั‚ั‹ะบะฒะตะฝะฝะฐัะบะฐัˆะฐ

  • #vegan Tom Yum Soup ! ๐Ÿ˜ ๐Ÿฅ• ๐Ÿ„  The main ingredient here was a wonderful and organic Tom Yum paste by @mekhalaliving . I also used Thai green Chileโ€™s , tomatoes, baked peanut-ginger tofu, veg broth, garlic, onion, carrots, tamari, lime, light coconut milk, cilantro, and lots of shiitake mushrooms. Usually with soups I like stews and very thick ones at that, but the flavor of Tom yum is so satisfying that you donโ€™t need it to be that thick. It also only takes about twenty minutes to make , and I can experiment further with this paste. #vegantomyum #ayurvedafood #macrobiotic #madewithmekala

I PROMISE Iโ€™m going to be real with you here. 
No worries, you can trust me!

First off & this is 100% random but I might have had a little boogie in my nose that I edited out before posting this. Do you blame me?! So um...side note Iโ€™m telling you now: 
STOP comparing your life to peopleโ€™s edited pictures on social media. 
Mic dropped. Moving on. 
See? You can trust me now! 
Iโ€™m real with you & I promise I wonโ€™t blow smoke up your butt. That being said: Iโ€™m in no way endorsing that you must adopt a raw food, vegan, oatmeal crunchie diet 100% of your life & that you should never eat noodles & I agree: carrot noodles are no replacement for a hot piping dish of Pad Thai from your fave restaurant.

But LISTEN: eating healthy is delicious & if you have bought the lie thatโ€™s itโ€™s not, Iโ€™m here to change your mind! That is literally why I am here. I want to do you my best to change your life one healthy habit at a time! 
This Pad Thai is so full of flavor and crunchy goodness you will just have to taste it to believe me! You will be saving yourself carbohydrates, yes, but thatโ€™s actually not the point! (I endorse healthy carbs hallelujah!) When weโ€™re talking about nutritionally dense foods, and packing healthy vitamins, minerals and antioxidants into our bodies, a carrot noodle will win over a regular noodle any day. 
By eating this raw (outside of the tofu that we cooked) youโ€™re getting even MORE energy from your food!

    This Pad Thai is so full of flavor and crunchy goodness you will just have to taste it to believe me! You will be saving yourself carbohydrates, yes, but thatโ€™s actually not the point! (I endorse healthy carbs hallelujah!) When weโ€™re talking about nutritionally dense foods, and packing healthy vitamins, minerals and antioxidants into our bodies, a carrot noodle will win over a regular noodle any day.
    By eating this raw (outside of the tofu that we cooked) youโ€™re getting even MORE energy from your food!

fresh basil leaves for topping

Ingredients for the filling:
600g cauliflower
4 handful fresh spinach 
1 onion
3 garlic cloves 
about 50ml soy cooking cream
1 tsp Soy sauce
1 tsp dried oregano
salt and pepper to taste

Ingredients for the tomato sauce
600ml sieved tomatoes
200ml soy cooking cream
1 onion
3 garlic cloves 
1 tsp tomato paste
2 tsp dried oregano 
1 tsp dried thyme
1 tsp agave syrup
salt and pepper to taste

1. Cook pasta, set aside and add some olive oil over them so that they donโ€˜t stick. 
2. For the filling: Heat 2 tsp olive oil in a pan at medium heat. Chop the onion and the 3 cloves of garlic. After that fry them for a few minutes until the onion gets glassy. Add cauliflower and 3 tsp Water in the pan. Cook the cauliflower at medium heat until soft (ca. 10min). Then mix the ingredients of the pan with the spinach, soy cooking cream and the spices in a blender until you have a creamy consistency. 
3. For the tomatoe sauce: Heat 1 tsp olive oil in a cooking pot and fry the chopped onion and garlic cloves. Add tomato paste and agave syrup, fry for about 1 minute at medium temperature. Then add the tomatoes, soy cooking cream and dried herbs. Finally season with salt and pepper to taste. 
4. Preheat the oven to 200 degrees top and bottom heat. Spread the tomatoe sauce on two big baking dishes (approx. 20x30). Stuff each shell with a tbsp. of filling and place them next to each other in the baking dishes.Drizzle about 1 tsp olive oil over each baking dish with shells, let them in the oven for 20-25 minutes. Serve with fresh basil and spinach leaves
