Toasted one of my everything bagels (I have shared the recipe here but also on my website too) at the hotel and brought some bacon (grabbed some from the breakfast buffet and kept in a lunch box with an ice pack) and avocado (picked it up at Publix) to add to the bagel. SUPER filling and delicious! This would be a good option for hikes, the beach, or anyone traveling!

  • Ingredients (Serves 4)⠀
For the Chicken:⠀
3 chicken breasts⠀
1 cup mozzarella cheese⠀
Salt and pepper⠀
For the Coating:⠀
2½ oz. pork rinds⠀
¼ cup flaxseed meal⠀
½ cup parmesan cheese⠀
1 tsp. oregano⠀
½ tsp. salt⠀
½ tsp. pepper⠀
¼ tsp. red pepper flakes⠀
½ tsp. garlic⠀
2 tsp. paprika⠀
1 egg⠀
1½ tsp. chicken broth⠀
The Sauce⠀
¼ cup olive oil⠀
1 cup tomato sauce⠀
½ tsp. garlic⠀
½ tsp. oregano⠀
Salt and pepper⠀

Directions⠀
1. In a food processor, grind up the pork rinds, parmesan cheese and spices.⠀
2. Slice the chicken breasts into thirds, and season them with salt and pepper.⠀
3. In another bowl, make the coating: whisk eggs and add the chicken broth.⠀
4. Begin to make the sauce by combining all the sauce ingredients in a saucepan and whisking. Let simmer for 20 minutes.⠀
5. Bread the chicken slices: dip them into the egg mixture and then into the pork rind coating. Place on a piece of foil.⠀
6. In a pan, heat a few tbsp. of olive oil and fry the chicken. Place the fried chicken into a casserole dish, cover with sauce and cheese. Bake for 10 minutes at 400ñF.⠀

Quase não acreditei quando vi no instagram da @vidaesaudefb que eles tem os chocolates Loov disponíveis para venda. Sério, faz mais de um ano que eu tento encontrar o chocolate branco em todo lugar que eu vou e hoje, no dia que o Beltrão Veg alcançou 100 seguidores, consegui experimentar!

Cada barrinha de 25g custa R$5,90 e os sabores disponíveis são chocolate branco e ao leite e vocês podem comprá-los na Vida e Saúde (Avenida Julio Assis Cavalheiro, 87D, Centro, em frente ao Sobá e ao lado da loja Maria Xique). A receita não leva nenhum ingrediente de origem animal, lactose, glúten, soja, gordura trans nem açúcar (para adoçar são utilizados eritritol e stévia). A base é manteiga de cacau e leite de coco em pó.

Sobre o sabor: gostei bastante do chocolate branco, ele lembra os “tradicionais”, porém é menos doce (o que me agradou). O chocolate ao leite é uma opção gostosa para quem não curte muito as porcentagens mais altas de cacau, pois o sabor é suave e bem docinho.

Super recomendo esse chocolate, principalmente o branco, para quem gostava antes de adotar o estilo de vida vegano ou descobrir intolerância/alergia à lacteos.

Nos stories vou postar o queijo ralado vegano que comprei na Vida e Saúde e mostrar as opções de queijos vegan que eles tem na loja, fiquem de olho!

  • In a day where homemade treats from strangers are a big no-no on Halloween here is a list of Refined-Sugar-Free options for those participating in trick-or-treating. 
1) Stickers (you can literally get these at the dollar store in individual tear-off stickers or just buy a sheet and cut them apart). 2) Play-Doh (my mom does this each year with the little super mini tubs of it) 
3)Crayons (my Aunt does this each year and passes out an Autism awareness coloring page too!) 4)Glow Sticks (I know these are potentially dangerous if they break but hey so is sugar 🤷🏼‍♀️. I have made glow stick bracelets MY Halloween thing) 
5)Spider Rings ! (Loved these as a kid especially the glow in the dark ones!) 6)Individually wrapped Fruit Leather (just make sure you check before you buy that it’s sweetened with fruit juice not sugar or corn syrup- they have a few good ones we like at Costco) 
7)Juice Boxes (we don’t get a lot of trick-or-treaters so this is totally feasible for us)
8)Reusable straws (We love the stainless steel ones!) MAKE SURE you tag someone who would love this list below!! . .

  • pulp cake... I hardly juice carrots 🥕 so I took full advantage of my pulp and created my own recipe. •carrot and celery pulp, 3 mini mancano bananas, a little almond flour, chia + hemp hearts,  a little bit of my freshly squeezed apple juice, almond butter and a sprinkle of chocolate chips 👌🏼
