- Harvests are in at the Refugee Farmer Commercial Garden at the International Center of Kentucky--literally everywhere magnificent crops growing or ready to eat. .
We have about 25 perfect #broccoli right now, about 30 more on the way. #Kale is ready for sale; also early #garlic--some of the 3000-4000 that are now 3ft tall; we have 750 #scapes from the hardneck garlic varieties. We harvest around 2 quarts per day of #strawberries, even as #blueberries are fixing to ripen early June. Our row of #carrots are sizing up; our #redcabbage is huge and will head in June, interplanted with a row of #celery. Excellent #potatoes are surrounded by double rows of #onions; luscious forest green #pepper plants are flowering and will harvest beginning in June. #Tomatoes, vigorous, thick-necked, healthy plants, are climbing their trellis. Anyone is welcome to come tomorrow, or anyday Monday-Friday from now on to buy some of these fresh harvests. All produce is #chemicalfree--by deeply amending the soil with compost and organic chicken manure, and putting and end to #tilling the soil, we have transformed soil quality and structure from a suuuper compact clay, bermuda grass lawn. Keeping the soil covered retains all rain and ground water: believe it or not, we have only watered 3 times since last September!!! .

- You know how I always say that I learn something new every day? Well, this is what I learned today: Leeks can produce scapes! Not only that, but harvested young, the scapes can be cooked and enjoyed. 🌿🤯
The other fun part was how to harvest.🌱 I've seen many videos of people cutting garlic scapes (which I can't wait to try), but one article I read mentioned pulling the scape out of the leek. Literally with your hands!!! You grab the scape and pull it from the inner part of the leek. This was scary to try but really fun! Swipe ➡️ to see video.
