  • LOW EFFORT SUNSHINE CHICKEN TRAY BAKE:
Hey foodies! Sorry for my little hiatus, I've had some stress-related challenges to my wellbeing of late and am working on finding a bit of work/life balance again... I'm getting there but I just can't seem to create when I'm not 100% happy! BUT enough about that, I'm easing myself back into the kitchen with easy deliciousness and tonight I made my sunshine chicken tray bake so I thought I'd re-share the recipe! 🖤

INGREDIENTS:
Orange segments + juice (from 2 large oranges)
4-6 chicken thighs
Half a ring of chorizo
1 red pepper
1/2 bag baby new potatoes
1 can butter beans (I actually used borlotti tonight)
1 red onion
A whole garlic bulb – halved or just the cloves
A few sprigs of fresh thyme
1 red chilli (optional)
salt & pepper
(serves 3-4 people)

METHOD
1 – pre-heat oven to gas mark 6 (200c)
2 - squeeze the juice from one of the oranges . Set aside
3 – roughly chop all ingredients (reserving the thyme until after cooking) - no need to be fancy this is a tray bake! And drain the butter beans.
4 – Place the chicken thighs (skin-side up) onto your baking tray and dot all other ingredients in and around. Pour over the orange juice and season with a pinch of salt and pepper.
5 – pop in the oven to roast for around 45mins-1hr (periodically check and shake things about). Once nicely cooked, sprinkle over fresh thyme and serve!

Note: You may want to spread everything evenly over two trays so that there is enough room for everything to roast properly... Just remember to swap the trays around in the oven a few times if (like mine) yours has a hot spot or is hotter at the top.

1 Ontario pork crown roast (approx. 7.5 lb/3.5 kg)
.
2 Onions - cut into ½” discs
.
2 Tbsp (30 ml) finely chopped fresh sage
.
1 Tbsp (15 ml) finely chopped fresh thyme
.
1 Tbsp (15 ml) finely chopped fresh rosemary
.
4 Tbsp (60 ml) olive oil
.
An assortment of fresh herbs and fruit for garnish
.
DRY RUB👍
.
1 tsp (5 ml) garlic powder
.
1 tsp (5 ml) onion powder
.
1 tsp (5 ml) salt
.
1 tsp (5 ml) freshly ground pepper
.
1 tsp (5 ml) ground ginger
.
1 tsp (5 ml) mustard powder
.
2 tsp (10 ml) paprika .
.
MAPLE DIJON GLAZE👍
.
2/3 cup (158 ml) pure maple syrup
.
2/3 cup (158 ml) apple cider vinegar
.
3 tsp (15 ml) Dijon mustard
.
PREPARATION IN OVEN👌
.
✔Coat fresh roast with a dry rub mixture of garlic, onion, salt, pepper, ginger and mustard powder. Leave in the refrigerator overnight
.
✔Pre-heat oven to 350⁰F/180⁰C
.
✔While the oven pre-heats, mix the maple syrup, apple cider vinegar and Dijon mustard, set aside
.
✔30 minutes before cooking, on a baking sheet, place roast on onion slices. Mix the sage, thyme, rosemary and olive oil and brush all over the roast
.
✔Cook for approximately 90 minutes, then baste with maple Dijon glaze. Glaze two more times until an internal temperature of 155⁰F/68⁰C is reached
.
✔Remove from oven and tent with foil for 20 minutes until internal temperature reaches 160⁰F/71⁰C)
.
✔Impress your guests when you present the whole roast at the table surrounded by fresh herbs and fruit

So I thought I’d start by sharing this crazy easy lunch that I’ve been making Colby for a while now. It can be eaten cold (which is great because he doesn’t have a microwave on the job sites), it’s packed with protein and good nutrients, and it’s cost effective! ⁣

I have included the total price for the whole list of ingredients - which makes 5 hearty wraps. I have then divided that by five to show you the cost of one wrap (one lunch). ⁣

Ingredients ⁣
-1 can black beans ($1.00)⁣
-2 avocados ($4.00)⁣
-1/2 cup crushed tomato ($1.00) ⁣
-1 onion (.50)⁣
-1 red pepper ($1.50)⁣
-5 tortilla wraps ($2.35)⁣
*garlic powder and chilli powder optional ⁣
⁣
Total = $10.35⁣
Divided by 5 (that’s how many wraps it makes) = $2.07 per wrap⁣
⁣
This lunch was quick and easy to make AND it only cost $2.07 for one wrap!! That’s cheaper than almost anything you could buy at a fast food resteraunt AND it’s much healthier! ⁣

Recipe deets: fry the diced onion and diced red pepper with chilli powder on medium heat for about five minutes. Mash the avocado with the crushed tomato and garlic powder in a bowl. Lay out the tortilla wraps and add a scoop of the bean mixture and the guacamole before wrapping. Repeat for 5 wraps - good in the fridge for about 4 days. ⁣

Banana Bread Layer
1 ripe, mashed banana 
2 tbsp almond butter 
2 tbsp coconut oil, melted & cooled 
1 tsp vanilla
3 tbsp honey (or maple syrup)
1 egg 
2/3 cup almond flour 
1/4 cup coconut flour
1/2 tsp baking powder 
2 tbsp almond milk 
1/3 cup dark chocolate chips

Chocolate Banana Bread Layer
1 ripe, mashed banana 
2 tbsp almond butter 
2 tbsp coconut oil, melted & cooled 
1 tsp vanilla
3 tbsp honey (or maple syrup)
1 egg
2/3 cup almond flour 
1/4 cup coconut flour 
1/2 tsp baking powder 
4 tbsp almond milk 
4 tbsp cacao or cocoa powder 
1/3 cup dark chocolate chips —-

Directions 
Preheat oven to 350 degrees, and grease a 9” cake pan with coconut oil, or line with lightly greased parchment. Starting with the bottom, regular banana bread layer. Beat egg and mix with mashed ripe banana. Add almond butter, melted and cooled coconut oil, honey or maple, and vanilla extract. In a separate bowl, whisk together almond flour, coconut flour, and baking powder. Combine wet and dry ingredients, now adding in the almond milk to help everything come together. Fold in chocolate chips. Transfer the first layer to the pan. For the second chocolate layer, follow the exact same order as before - after you add the almond milk, add cacao tbsp by tbsp to ensure it is thoroughly mixed in. Fold in chocolate chips. Add chocolate layer on top of regular layer. Bake for about 25-30 minutes until cake’s edges are golden brown and knife inserted in center comes out clean. Let cool and serve immediately!

Beat egg and mix with mashed ripe banana. Add almond butter, melted and cooled coconut oil, honey or maple, and vanilla extract. In a separate bowl, whisk together almond flour, coconut flour, and baking powder. Combine wet and dry ingredients, now adding in the almond milk to help everything come together. Fold in chocolate chips. Transfer the first layer to the pan. For the second chocolate layer, follow the exact same order as before - after you add the almond milk, add cacao tbsp by tbsp to ensure it is thoroughly mixed in. Fold in chocolate chips. Add chocolate layer on top of regular layer. Bake for about 25-30 minutes until cake’s edges are golden brown and knife inserted in center comes out clean. Let cool and serve immediately!

Recipe 👇
For the French Toast:
8 slices vegan white bread, left out on the counter for about an hour to get a little stale
1 ½ cups vegan egg replacer (like just egg, follow your heart vegan egg or tofu)
1 tbs oat milk
1 tbs maple syrup
2 tsp vanilla
½ tsp cinnamon
1/8 tsp salt
4 tbs vegan butter

Sandwich Fillings:

Vegan Egg substitute of your choice
Vegan Breakfast sausage, vegan bacon, or vegan deli ham slices
4 slices vegan cheddar or other vegan cheese of your choice
More vegan butter, oil, or spray to cook the vegan eggs with
Extra maple syrup for serving!

DIRECTIONS
Whisk together vegan egg, oat milk, maple syrup, vanilla, cinnamon, & salt in a shallow flat container or pie dish.
Heat a large pan over medium-high heat, I had mine at a 6 on my electric stove. Add 1 tbs vegan butter.
Dunk 2 pieces of bread into the egg mixture, making sure to evenly coat both sides, then add to the pan once butter is melted and hot. Cook 3-4 minutes on each side, set aside on a plate. Repeat until all bread is used.
While the French toast is cooking, heat another large pan and cook up your vegan egg or tofu according to package or recipe.
If you’re using sausage, cook according to package instructions. Now assemble your sandwiches by loading them up equally with vegan egg, sausage, and cheese! Serve with warm maple syrup if desired.

Ingredients:

SPICY BBQ CAULIFLOWER WINGS | serves 2 (4 as snacks) 
INGREDIENTS:
1 cauliflower, cut into florets
75g (2,5oz) flour
1dl (1/2cup) almond milk or milk of your choice
3 tbsp water
2 tsp thyme, dried
2 tsp salt
2 tsp pepper
1dl (1/2cup) breadcrumbs
2,5dl (1cup) bbq sauce
1 tbsp chilli paste
Topping:
1 tbsp sesame seeds
1 scallions, sliced

METHOD:
1️⃣ Preheat oven on 200°C / 400°F
2️⃣ Mix flour, milk and dry spices in a bowl and pour the breadcrumbs over plate.
3️⃣ Coat the cauliflower florets with the batter. Then add them to the breadcrumbs and put them on a baking tray. Put in the oven for 20 mins.
4️⃣ Put a skillet on low heat. Add the bbq sauce and chilli paste. Stir and cook for 2-3 minutes. Add the wings and make sure they’re coated in the sauce. Drizzle sesame seeds and scallops on top and enjoy with your fav dip.

1 tsp honey
2 tsp bee pollen
1/2 mashed banana
1 tbsp shredded coconut
1 c water
1/2 c almond milk
Directions: cook oats in water for 13 minutes stirring occasionally. Add almond milk and cook for another 7 minutes. remove from heat and mix in the mashed banana, bee pollen and shredded coconut. Top it off with more bee pollen, another 1/2 banana, coconut chunks, peanut butter and a drizzle of honey✨
