  • Panjiri/Panjeri is a staple from the Punjab region and Hyderabad of the Indian subcontinent, treated as a nutritional supplement. It is made from whole-wheat flour fried in sugar and ghee, heavily laced with dried fruits and herbal gums. It is usually eaten in the winters to ward off cold. Panjiri/Panjeri is normally given to nursing mothers. It is considered Hot Food to help with the production of breast milk. It has been used for thousands of years, by the ancient Hindus then many centuries laters by the Sikhs. Its use is quite ritualistic and meaningful during nursing of mother.

Panjeeri- A winter delicacy made in the region of Punjab using wheat flour which is considered highly nutritious as it contains dryfruits and ghee.

What goes in?
Wheat flour- 1.5 cups
Powdered sugar-1 cup
Chopped Cashew - 1/2 to 3/4 cup
Chopped Makhana - 1/2 to 3/4 cup
Chopped almonds - 1/2 to 3/4 cup
Grated dry coconut - 1/2 to 3/4 cup
Cardomom powder- 1/2 TSP
Ghee - 1/2 cup to roast wheat powder
Ghee - 2 to 3 tbsps to roast the dry fruits

How to do?
☘️Roast the dry fruits seperately along with ghee.
☘️Roast the wheat flour in ghee on low flame till there is a mild fragrance coming out it.
‌☘️Switch off the flame. To the roasted flour add  powdered sugar, dry fruits and cardomom powder and mix thoroughly.
☘️Store and enjoy😋

  • In order to keep up with my “Mothers” i had to do something sweet also one of the major inspiration here is my bhabhi @addicted2cooking who loves to cook like me and also motivates me a lot. This beautiful bowl you see in the picture is a gift from her. 🤗

RECIPE👇🏻 1️⃣ Take 2 kg milk, reduce to 1/3 of its quantity on low flames. I haven’t used any thickening agent but i added 200gms of @milkmaidsweetdelights Condensed Milk which means no more sugar. 
2️⃣ Added 5 whole elaichi , whole because i like to hunt them out later. 
3️⃣ Add your choice of dry fruits. Soak them and chop them. 
4️⃣ Keep stirring and pushing it to the edges of the vessel and in the end scrape all in. ( this method with give you nice lachha style rabri) 
5️⃣ let it rest, when it reaches room temperature, you can cool it a bit and serve 🤤  #Tips
1️⃣ Don’t hurry the process. 
2️⃣ Add a spoon of cornstarch slushy or milk powder or a spoon of rice powder to speed up the process. 
3️⃣ Be around and don’t let it turn brown or stick to the base. 
4️⃣ Add kewra or rose water and kesar and gold foil whatever you like.

  • Feel like doing a recap of my Jammu trip through a few posts over this week. Gotta start with something sweet.
Everyone tells you that going to Pahalwaan di hatti is a must. Here's what I got to get back home from there thanx to Inder Veer. I'm not a big Panjiri fan but this one tasted heavenly. They call it The special Sund Panjiri or just Sund.
It is made of gondh, sund( dry ginger) dry fruits, nuts, ghee, lots of sugar🙈 and more and is a must have winter special in the North. Also, given to new mothers for strength and healing. 
I especially liked the texture of chaar magaz ( melon seeds) in it.

  • Loaded with nuts and jaggery, this delicious Panjiri is just the sweet to bring in Guru Nanak Jayanti. What other dishes do you plan to prepare on this important occasion?

Recipe: (Serves 8-10)

Ingredients:
- ½ cup flaxseeds
- ½ cup cashews
- ½ cup almonds
- 1 cup ghee
- 2 tbsp gond
- 1 cup atta/whole wheat flour
- 1 tbsp ginger powder
- 1 cup gur (jaggery)

Method:
1. Roast the flaxseeds in a pan on medium flame. Flaxseeds roast quickly, so be careful and roast only till they start to crackle. Remove from flame, and set aside to cool. Once cool, grind them to a powder.
2. Similarly roast the almonds and cashews- they will take longer than flaxseeds. Once roasted, let cool. Once cooled, grind the cashews and almonds to a coarse powder. Set aside.
3. Heat ghee in a kadhai. Add the gond, and cook till it puffs up. Remove with a slotted spoon and grind to a powder.
4. In the same pan with the ghee, add the atta, and roast on medium low heat till the ghee separates, and the atta is light brown in color. Add the ginger powder and cook for a few seconds.
5. Add the gur, and cook till the gur is melted, and the ghee separates.
6. Add the dry fruit mixture and mix well. Remove from flame, and add the ground flax seeds. Mix well. Store in an airtight container for 2-3 weeks.

This cooked recipe is a labour of love ❤, rooted in my family's Ayurvedic wisdom. My great grandfather was the village Ayurvedic Dr in India 🕉 and he cooked panjiri for my dadima when she had her first child. Since launcing panjiri, I've received many enquiries from new mums, their mothers & MILs, where there isn't anyone in the family to cook it anymore, or people just don't have the time or knowledge to make it. I'm so excited that new mums from the West are also appreciating Dadima's culinary wisdom, and learning about this 'nourish the new mum' food.

Starting the day the Punjabi way with @_dadimas Panjiri topped fresh fruit & yoghurt.
Panjiri?! What’s that I hear a lot of you say?!...
Well, Panjiri is an age old Ayurvedic food high in energy and fibre...kinda like a nutritional supplement that can be eaten at any time of the day! 
This super-food is prepared with ghee, wheat flour, semolina and loaded with mounds of healthy nuts.
Panjiri truly is one of the heirloom recipes of our times that have been passed down from generations to generations and holds so many precious memories and special moments - if you’re Punjabi then you’ll sure know! ☺️
I still remember those days when my Biji (grandmother), Mom and Aunties prepared Panjiri during the Winter months and more recently during my times of Motherhood. 
I remember eating tonnes of Panjiri during my pregnancies and afterwards too - my Mum would warm it slightly and give it to me with a mug of hot milk - she would say that it helps to regain strength and vitality and aids your body to recover as well as helping with the production of breast milk.😌 More recently I’ve even mixed Panjiri into a fruit crumble topping and added extra nuts & coconut suffice to say we’ve made it that way a few times now! 😋

My amazing & beautiful friend Anni is a firm advocate for Panjiri and was so inspired my her Grandmothers life and culinary skills that she, just like myself, followed her passion to set up and launch @dadimas.

    Well, Panjiri is an age old Ayurvedic food high in energy and fibre...kinda like a nutritional supplement that can be eaten at any time of the day!
    This super-food is prepared with ghee, wheat flour, semolina and loaded with mounds of healthy nuts.
    Panjiri truly is one of the heirloom recipes of our times that have been passed down from generations to generations and holds so many precious memories and special moments - if you’re Punjabi then you’ll sure know! ☺️
    I still remember those days when my Biji (grandmother), Mom and Aunties prepared Panjiri during the Winter months and more recently during my times of Motherhood.
    I remember eating tonnes of Panjiri during my pregnancies and afterwards too - my Mum would warm it slightly and give it to me with a mug of hot milk - she would say that it helps to regain strength and vitality and aids your body to recover as well as helping with the production of breast milk.😌 More recently I’ve even mixed Panjiri into a fruit crumble topping and added extra nuts & coconut suffice to say we’ve made it that way a few times now! 😋

    My amazing & beautiful friend Anni is a firm advocate for Panjiri and was so inspired my her Grandmothers life and culinary skills that she, just like myself, followed her passion to set up and launch @dadimas.
