  • Cinnamon banana oat bread 🍞 Such a good way to start your morning off or even as a little post-dinner healthy dessert! Recipe below!

Ingredients:
3 ripe bananas
1 1/2 cups gluten free flour (I used @bobsredmill 1-1 flour)
1 tsp baking powder
1/4 cup brown sugar 
1 cup rolled oats (gf)
1 tsp vanilla extract 
1 Tbsp cinnamon 
1/2 tsp nutmeg 
1/4 - 1/2 cup of dairy free milk (I used @traderjoes coconut milk)
1/2 tsp salt 
2 eggs

Instructions:
Preheat oven to 350 degrees Fahrenheit. Begin my mixing all dry ingredients in a mixing bowl, set aside. Mash the bananas in a separate bowl until liquified then add to the main mixing bowl with dry ingredients. Add in remaining wet ingredients and stir thoroughly. Transfer to a baking dish for a loaf or muffins, greased or in a nonstick pan. Bake for 30-35 minutes, serve with @earthbalance on top and some sprinkled cinnamon! .

  • Buddha bowl full of all my faves 🙌🏼 It’s bowls like these that give me life. Sometimes I forget how delicious a bowl of veggies can actually be. Ya girl loves her vegan chickey nuggs too much 🤦🏼‍♀️ I roasted up some, air fried some, sautéed some. You got a whole array of cooked veggies! I drizzled it all with a pesto tahini dressing 😋 So simple and so yum! I’m off to go teach again! I wish you all a beautiful Friday night 🌻

Deets: sautéed garlic kale + air fried potatoes (chop tatter + season with @chosenfoods avocado oil, salt, pepper, and dried parsley + air fry for 15-17 minutes at 375 F) + roasted carrots, red onion, and mushrooms + pesto tahini dressing (I just mixed @traderjoeslist vegan pesto and some tahini with a touch of water to thin)

  • 🍰There aren’t many things that a good piece of cake can’t fix!😆 Am I right?

One thing I missed the most when I got IBS and started transitioning to low FODMAP and gluten free diet was cakes, and all the sweet stuff. ( yeah maybe you think that’s silly, but I was a girl with the biggest sweet tooth ) 🤣
Firstly I didn’t know how to bake with gluten free flour but the other things was that sugary things always seem to activate my symptoms.
Over the time I learned a few things that allowed me to enjoy a piece of cake every now and then.
Firstly I learned how to bake with gluten free flour, and believe me is not hard at all.
Then I learned to replace all the dairy ingredients with lactose free or dairy free ones. And avoiding high FODAMP ingredients like soy, honey and etc.
I started adding less sugar than what it would normally be required, and this thing made all the difference.
I continued enjoying chocolate, but I switched to dark chocolate. 
Dark chocolate is most of the time dairy free and contains much less sugar.
And for all the other packaged sweets (like pre made cakes, bars, cupcakes, ice creams). I don’t consume them that much, mostly because they are too sugary for me. But if I occasionally wanna have one, I make sure I read the ingredients and avoid the ones containing FODMAPs.

  • Se você não ouviu falar, agora vai descobrir: overnight oats, ou aveia dormida, são uma febre de alimentação saudável. É como tomar um café da manhã, pronto, saboroso e cheio de nutrientes. Nossa versão vai banana e mel, mas você pode montar como quiser. Aposte nessa maravilha!

Ingredientes
2 colheres (sopa) de farelo de aveia
1 colher (sopa) de chia
1 colher (sopa) de quinoa
4 colheres (sopa) de leite desnatado ou leite vegetal
200 ml de iogurte desnatado ou leite de coco
1 banana picada
1 colher (sopa) de semente de linhaça
Mel a gosto 
Modo de preparo
Em uma vasilha, misture o farelo, a chia e a quinoa e acrescente o leite. Aguarde alguns minutos e comece a montagem em um pote de vidro. Coloque a mistura primeiro, depois a banana e complete com o iogurte. Coloque mais algumas bananas em cima e finalize com a linhaça e o mel. Está pronto! Você pode servir imediatamente ou tapar bem o pote e guardar por 2 a 3 dias na geladeira, para comer no café da manhã.

  • Leftover PB Chocolate Oat Cups 😍 To be honest, I only had one of these and Eli had the other but the picture looked better with two 🤷🏼‍♀️ I always try and say if I didn’t eat everything in the picture because I know it can get confusing on IG with food pictures. If you wanted to eat 2 or more of these cups and that feels right for you- nothing wrong with that 😄 Just like everything on social media, don’t compare what you think someone else is doing to what is best for you ❤️ These Pb cups have been so perfect for breakfast, snacks, or dessert! Happy Fri-yay everyone! -

#recipe details:
A more detailed recipe is also on my blog, linked in my stories + bio. 
In a bowl, mix together 
1 cup old fashioned rolled oats (I used some Gf ones)
1/4 cup almond flour 
1 cup runny peanut butter ( I like organic Pb without all the filler in there) 
1/2 cup maple syrup 
1/2 tsp sea salt 
1 tsp vanilla
1/4 cup collagen (used @ancientnutrition) 
Mix everything together with a spatula. 
Grease a muffin tin. Makes about 10 cups. 
Fill the cups about 3/4 of the way, you want to leave room for the Pb chocolate topping.
Place in the freezer for about 1- 1 1/2 hours. 
Chocolate Pb topping: 
1/2 cup chocolate chips + 2 tbsp peanut butter. Melt in the microwave for 30 seconds, stir, repeat if needed. 
Add the chocolate oh topping on and smooth out with a knife. 
Place back in the freezer for 30 mins. 
Store in the freezer or the fridge! #glutenfree #healthybreakfast #eeeeeats
