  • ‘tis the season to bake muffins so I thought I'd share this recipe again! chocolate chip oat muffins, with nutty sesame undertones from the tahini. hands down my favorite muffin recipe. also gluten-free, although unintentionally. eat them for breakfast, pack one for an office snack, stash a couple in your pockets to keep your hands warm, idk. they’re very good.

TAHINI CHOCOLATE CHIP MUFFINS (V/GF) 
Dry Ingredients
 2 1/2 cups (260g) rolled oats
 1/4 cup (30g) walnuts (sub sunflower seeds for nut allergy)
 1/2 cup (58g) rolled oats, separate
1/2 cup (65g) coconut sugar
1 tbsp baking powder
1/2 tsp salt

Wet Ingredients
2 (very ripe) medium bananas
1 cup (240ml) unsweetened non-dairy milk
1/4 cup (62g) tahini (or peanut butter)
2 flax eggs (2 tbsp ground flax + 6 tbsp water)
1 tsp vanilla extract
2 tbsp lemon juice
3/4 cup dark chocolate chips

Preheat oven to 350F/177C. Prepare flax eggs by whisking 2 tbsp ground flax with 6 tbsp water in a small bowl, and let sit to thicken. In the meantime, add 2 1/2 cups rolled oats and walnuts to a food processor or high-speed blender, and pulse until they form a fine meal. Whisk in the other 1/2 cup rolled oats, coconut sugar, baking powder, and salt.

In a separate large bowl, mash the bananas with a fork, then add in the non-dairy milk, tahini, flax eggs, vanilla extract, and lemon juice, stirring to combine. Incorporate the dry mixture into the wet mixture, stirring until all clumps have disappeared. Fold in chocolate chips and divide batter evenly into a lined muffin tin. Bake in the oven for 25-28 minutes until tops are golden brown, or when an inserted toothpick comes out clean. Let cool on a rack, then enjoy!
