  • MASHED SWEET POTATO BAKE: Who here is ready for #thanksgiving? 🙋🏼‍♀️🙋🏼‍♀️🙋🏼‍♀️ I’m cooking my first-ever Thanksgiving feast (for two, because we are staying in Chicago) and I’m all about testing recipes in advance👩🏼‍🍳 I honestly just winged it here, basing this recipe off flavors of my Mom’s classic + DELISH marshmallow sweet potato bake, but opted to make it #plantbased instead (aka no butter). I must say, I’m v impressed with how it turned out!! # 
THE GOODS:
•2 roasted, peeled and chopped sweet potatoes
•1/2 c organic pumpkin purée •2 scoops vanilla plant-based protein powder •1 flax egg (2 tbsp water + 1 tbsp ground flax — let sit in a bowl for 5 mins)
•Dash of: cinnamon, pumpkin pie spice, pink Himalayan sea salt and liquid stevia •1 tsp baking powder •Handful of chopped walnuts 
# 
MAKE IT:
1. Preheat oven to 375 degrees F.
2. Place chopped + peeled sweet potatoes, pumpkin, protein powder and a dash of nut milk in a blender. 
3. Pulse until you get a thick, but not chunky, mix.
4. Place mixture in a bowl, add in spices, baking powder and optional drop of liquid stevia, and mix with a spatula.
5. Fill a greased (olive oil spray) 8x8 baking dish with mixture. Top with walnuts.
6. Bake for 40-45 minutes and let cool for 10 minutes before serving! #kbeats

  • Views from this morning 🥰 I’ve been absolutely loving stovetop oats as the weather has been getting colder and with a high of 40 degrees today, it couldn’t have been a more perfect day to whip up a bowl. Paired it with a hot cup of tea as well which I’ve been loving lately! Pro tip: add half of a super ripe mashed banana to the pot while cooking your oats. It makes them so sweet and creamy! I hope you all have a wonderful Wednesday ❤️

crispy sweet potato rounds, avocado slices and yolky fried eggs - a combo that will always have my heart! ❤️
I’ve been asked a few questions about “meal prepping” and how I do it, and these are my top three tips:
•wash and chop things ahead of time! your hangry and lazy future self will thank you for taking the time to do this!
•make big batches of things that you know you love to eat to have on hand to assemble meals - for instance, when I make sweet potatoes, I’ll wash, chop + roast at least 2-3 to have for a few meals! same goes for vegetables, cooking pasta, etc! same amount of work and you get way more out of it!
•make + store things in the freezer to have to pull out and heat up for quick meals! my freezer is packed with soups and meatballs (oh and of course ice cream and baked goodies 😎)

  • Crispy Kale + Cauliflower Gnocchi 🌱😍

Recipe:⠀⠀
Ingredients⠀
1 head of cauliflower⠀⠀
1 to 1 1/2 cups of flour⠀⠀
1 vegan egg⠀⠀
Salt⠀⠀
Garlic powder⠀⠀
Red pepper flakes⠀⠀
1 tsp olive oil⠀⠀
1 tsp vegan butter⠀⠀
⠀⠀
Method⠀⠀
Preheat oven to 400F. Wash and chop cauliflower into big chunks. Bake in the oven for 20 minutes to roast. In a high speed blender add the cauliflower and blend until smooth. It will be a little bit fibrous but the consistency should look smooth and almost resemble mashed potatoes. Then take about 1/2 cup of flour and put some in a small circle on a clean surface. Add about half of the blended cauliflower and begin to mix. It will be sticky at first. Then flatten out and add the vegan egg, another 1/2 cup of flour, the rest of the cauliflower and 1 tsp of salt. Keep mixing and kneading with your hands. If your dough is still sticky add the final 1/2 cup. Depending on how big your cauliflower is and how much water it retained you may need more or less flour. Once the dough is no longer sticky to the touch and can be formed into a log shape the dough is done. Begin to cut your dough into long strips and then cut that into small pieces. These are your gnocchi. Keep flour handy incase the dough sticks a bit. Then cook your gnocchi in boiling water for 3-5 minutes until they rise up to the top. You can eat them this way or you can pan fry them.⠀⠀
To pan fry add 1 tsp of olive oil and 1 tsp of vegan butter into a pan. Let it melt then add your cooked gnocchi. Let them cook for 10-15 minutes on medium heat until they are crispy. In a separate pan take 2 big handfuls of kale and a tsp of olive oil and cook until crispy. Then you can season the gnocchi with 1 tsp of salt, 1 tbsp garlic powder and 1 tbsp red pepper flakes. Once both the kale and gnocchi are crispy mix together, give a taste and add additional seasonings if necessary.⠀⠀
Will make 4-5 servings. Enjoy!

30g of melted unrefined coconut oil or butter

Icing:
1 dark chocolate bar
1 tablespoon of unrefined coconut oil
1 heaped spoon of peanut butter (optional)

Dates soak and blend. Beat off the beetroot on a large mesh. Combine all dry (flour, powder, soda, cocoa) and liquid ingredients (eggs, oil, agave syrup). Combine beets and dates, add dry ingredients, mix. Then add the liquid ingredients. Spread the form with baking paper and pour out the dough. Bake at 200 degrees about 40 minutes. Cool.

Melt chocolate in a water bath and combine with coconut oil and butter. Spread on the cake.

  • I love a good salad that I can prep a big batch of & this Asian chicken salad is a recent fave💯 plus minimal veggie chopping because I used a pre-made salad mix from @traderjoeslist & added a few things in😉when I was in san diego, I had something similar to this at a restaurant & I knew I had to recreate😋full recipe linked in my bio! hope you have a great wednesday!💛
