  • Thai Green Chicken Skewers โ €โ €โ €โ €โ €โ €โ €โ €โ € Quick healthy and easy, but oh so tasty! I cooked these in a really hot oven, but with BBQ season around the corner (I hope!) these tasty kebabs would be brilliant cooked outside. I served these with sticky rice and a cucumber ribbon salad which was delicious. Is this a recipe you will try? โ €โ €โ €โ €โ €โ €โ €โ €โ € Serves 4 โ €โ €โ €โ €โ €โ €โ €โ €โ € INGREDIENTS โ €โ €โ €โ €โ €โ €โ €โ €โ € 4 chicken breasts - cut into cubes 8 Wooden skewers โ €โ €โ €โ €โ €โ €โ €โ €โ € Paste/marinade โ €โ €โ €โ €โ €โ €โ €โ €โ € 2 cloves garlic 1 blade lemongrass tough outer leaves removed and chopped 2 teaspoons chopped ginger 2 kaffir lime leaves 1 tablespoon fish sauce Juice of 1 lime 1 teaspoon palm sugar or honey 2 green Thai chillies 2 tablespoons chopped coriander 2-3 tablespoons coconut milk โ €โ €โ €โ €โ €โ €โ €โ €โ € METHOD โ €โ €โ €โ €โ €โ €โ €โ €โ € Preheat the oven to 220 degrees. โ €โ €โ €โ €โ €โ €โ €โ €โ € Blitz the paste ingredients together until smooth. Loosen with more coconut milk if too thick. Marinate the chicken in the sauce for 30 minutes or overnight. Thread the chicken into the skewers. Drizzle with a little oil and season. Thanks for this..have been looking for a good Thai green curry paste(was inspired in Malaysia) there are so many different ones out there...I feel like I can โ€œsmellโ€ yours( such a weirdo๐Ÿ˜€) so will try it!! X
