Brownie:
* 1 + 1/4 cup red kidney beans *sub black beans
* 1 cup full fat coconut milk
* 2 tsp bourbon vanilla
* 1/4 cup maple or agave syrup
* 2 tbs coconut sugar *optional; sub 1/2 tbs sucralose
* 1/8 tsp salt
* 1/2 tbs baking powder
* 1/4 cup cacao powder
* 3/4 cup flour *see notes
Peanut Butter Swirl:
* 1/4 cup smooth peanut butter
* 2 tbs maple or agave syrup
Instructions:
* Preheat the oven at 180C/350F. Line a baking tin with parchment paper. In a foodprocessor/blender add all the ingredients for the brownie except for flour, baking powder & cacao. Blend until smooth.
* Add remaining ingredients to a deep bowl and stir to combine. Add the liquid mixture and whisk until lump-free. In a seperate bowl, whisk pb + syrup until smooth.
* Add batter to prepared tin, add spoonfulls of the peanut butter mixture and swirl with a soft knife moving up and down both horizontally and vertically. Bake in the middle of the oven for 20-25 minutes, allow to cool prior to cutting. •••FULL RECIPE + POST LINKED IN BIO•••

    Part 2: Today, the Mrs. and I experienced Hospitality off not just another Planet, but another Dimension. 
Been Hosted at the Winery by Owner Silvia and Food Anthropologist Husband, and Chef, Andre.

Introduced by no other than Fausto Aroldi, former President of the Portuguese Chefs Association, now Based in Macau.

To be hosted for Lunch is nothing real New, but to be part of the process and having it prepared Market Fresh, while there, that was simply Amazing, Associate Isabella, a Funky Lady, that looks after the kitchen as well, helping Andre prepare some outstanding local delights, Her Sabayon was superb.

First time in my life tried Pink Marlin, story is that the Pink Colour comes for the Marlin going as deep as 700m. (Not sure I understood correctly? Could be 70, LOL), The Marlin delights on Langoustines, and therefor the pink colour, much to the chagrin of the Local Fisherman, who get more $$$ for Langoustines, then the Fish. :-) As for the Winery, which Boasts 11 Suites, with view on the wine yards, it was simply stunning. Their Sparkling out of this world, the Whites, aptly named Nana, after Silvia’s Mother both Chardonney, plus another Alvarinho, apparently a Green Vine that grows especially well in this part of Portugal. Amazing with the Food, and the stunner, was the Quinta Da Lapa, Reserva and its Red companion both amazing drops, that went really well with the food.

Another Surprise was the Claret, with both the rRed and White Grapes fermented to gather, and not just simply mixed up at the end, surprising story, but more later.

In Asia, Portuguese wines are simply under rated, especially in the stuck up Singapore Market, that only seems to go for labels, and upper crust locations, but what to do, such is the ignorance of our wine consuming upper crust.

Once again, today the biggest surprise fo them all. Love Portugal, Love the People, and the REAL Food.
