Recipe
makes about 6 servings

Ingredients:
2 cups cooked quinoa
1 (15oz.) can of black beans, drained and rinsed, OR about 2 cups homemade cooked black beans
1 large green bell pepper, diced 
1 large red bell pepper, diced 
2 cups cherry tomatoes, quartered
1 small red onion, diced
a good handful of fresh parsley or cilantro leaves, chopped
1 large avocado, chopped
1 Tbsp extra virgin olive or avocado oil
3 Tbsp fresh lime juice
1/2 tsp ground cumin
sea salt and fresh ground black pepper to taste (about 1/4 teaspoon each)

Instructions:

In a large bowl add all the ingredients and very gently stir to combine.

You can serve this immediately or place in airtight containers and refrigerate.

tortillas de trigo

1 aguacate🥑

2 huevos (opcional)🥚🥚 2 latas de atún con agua o aceite🐟🐟 3 cucharaditas de curry en polvo

Unas hojas de lechuga🍃

Estas wraps de atún y aguacate están cargadas de proteínas, verduras y grasas buenas para una comida muy saludable y abundante. Ingredients:

1 can chickpeas
1 can red kidney beans 
3 clove garlic minced 
1 inch ginger finely chopped 
1 onion diced 
2 tbsp curry powder 
1/4 tsp tumeric powder
2 tsp chilli powder 
1/4 tsp cumin seed 
200 ml almond milk 
2 tbsp ground almond 
3 bird eye chillies
2 tsp brown sugar 
Salt and pepper for taste 
1 tbsp lime juice 
Coriander and rice for serving

Heat oil in a pan and add in the garlic, onion and ginger then sauté till fragrant.
Secondly add in the cumin seed, curry powder, tumeric and chilli powder. Follow by adding the almond milk while let it cook on low heat for 5 minutes. Once boiled add in the chickpeas, red kidney beans, brown sugar, lime juice, salt and pepper for taste. Lastly add in the ground almond into the curry, stir and simmer for 5 minutes. Finally remove from the heat and serve with rice with having coriander on it. It’s best to eat while it still hot.

  • Maple Bundt Cake 
If you know the fiasco I went through with this maple syrup it’s comical! My father is a big fan of maple syrup (duh he’s canadien) and I had this maple syrup sitting in my pantry for months. No idea what to do with it. And I decided to finally make him proud and make a cake with it. But it was moldy!!! Who knew maple syrup once opened needs to be refrigerated?! Good thing I always have waaaay more ingredients on hand than I actually need I found another tiny bottle. And my cake was saved!! It’s light and fluffy and oh so delicious!! •
3/4 cup oil 
1/2 cup brown sugar 
1/2 cup maple syrup 
3/4 cup milk (I used almond milk to keep it parve)
2 eggs 
2 cups flour 
2 tsp baking powder ➡️mix the first 5 ingredients together and add the dry. Mix just until incorporated ➡️pour into a well sprayed bundt pan and bake 350 for 25-30 min or until toothpick inserted  comes out clean 
Drizzle with caramel syrup ❄️freezes amazing

Ingredients
Spinach Cream
1 tsp olive oil for frying
2 cloves garlic minced
3 cups fresh spinach roughly chopped, or sub frozen
pinch of salt more to taste
2 tbsp vegan cream cheese 
Grilled Cheese Sandwich
4 slices bread of your choice
1 tbsp vegan butter or oil
1 cup vegan cheddar cheese shredded
Instructions
Spinach Cream
Heat a teaspoon of olive oil in a skillet. Add the garlic and sauté for 30 seconds. Then add the spinach and a pinch of salt, and sauté for a further minute until just wilted. Transfer to a bowl, drain off any excess liquid, then stir in the vegan cream cheese and another pinch of salt to taste. 
Grilled Cheese Sandwich
Clean the same skillet (or use another large pan) and heat to medium-high heat.
Spread vegan butter (or oil) on one side of each of the bread slices. Once, the pan is hot, add 2 slices of bread, buttered side down. On each slice, spread some shredded cheese, the spinach cream filling, some more cheese (1/2 cup cheese per sandwich), and top with the other slices of bread, buttered side up.
Use a spatula to gently press down on the grilled cheese sandwich during frying. When the bottom bread is browned, flip the sandwich and cook until the other side is toasted too and the cheese is melted, about 2-4 minutes each side.
Serve warm and enjoy!
Notes
If you want a meltier sandwich, you can microwave it for about 15-20 seconds after frying. [Recipe as posted on biancazapatka.com]
