Ingredients:
- 1 eggplant, diced
- 2 small/1 large chopped zucchini
- 1 package of cherry tomatoes, diced
- 1/2 diced white onion
- 1 red diced bell pepper
- 1 8oz can of tomato sauce
- minced garlic clove
- salt and pepper
- salmon ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀
Directions:
- dice all of your vegetables first
- in a large skillet over medium heat, add olive oil, minced garlic clove, and half a chopped onion and bell pepper, cook for about 5 minutes
- add eggplant and zucchini along with a good amount of salt and stir until soft
- add the diced tomatoes and can of tomato sauce, reduce heat to a simmer, add a lid and cook until all vegetables are soft and becomes more of a “stew”
- cook salmon on a baking sheet in a preheated oven of 400°F with salt, pepper, and garlic powder for seasoning for 12-15 minutes
- serve ratatouille and salmon together and enjoy!

Easy Peanut Dipping Sauce:
1/2 cup natural unsweetened crunchy peanut butter
1 Tbsp rice vinegar
1 Tbsp coconut aminos or soy sauce

If you want to eat more plants but miss the taste of meat, mushrooms are a great solution because of their natural umami flavor (which our brains are hardwired to love). They’re also incredibly rich in plant based phytonutrients that boost immunity and overall health 💥

I lightened traditional matar mushroom (peas with mushrooms) by substituting cashew cream for heavy cream. Topped with dried fenugreek which can aid in blood sugar control and adds a lovely herbaceous bitter note and fresh cilantro for a vibrant hit of color and flavor.

Enjoy with a bowl of lentils and rice or with fresh hot rotis or even as a veggie side for grilled chicken or fish.

RECIPE
💥Sautee 2 cups chopped mushrooms in 1 tablespoon avocado oil or ghee with salt and pepper until just browned. Set aside.
💥Warm a tablespoon of oil in the same pot and sautee a paste of 1/2 onion, 1/2 inch knob of ginger and 3 cloves garlic until lightly browned, 5-8 minutes
💥Add 1.5 teaspoons ground cumin, 1 teaspoon coriander, 1/2 teaspoon turmeric, 1/2 teaspoon garam masala and 1/4 teaspoon cayenne (optional) and sautee for a minute until fragrant
💥Add 1 cup puréed or diced tomatoes and sautee for 5 minutes
💥Stir in 1/2 cup cashew paste (cashews and water in a 1:1 ratio puréed), the mushrooms and 1/2 cup peas
💥Add 1/2-1 cup water, a bay leaf and simmer until the peas are cooked to your liking
💥Season with salt to taste and more cayenne for heat if you like
💥Top work dried fenugreek leaves and fresh cilantro and serve right away
